Welcome to my monthly post where I share a peek into the last month at our house! Let’s just say that January was eventful!

We started the month on January 1 with driving back from our Christmas trip to Kansas. Kathrynne and Micah got sick on the trip home and by the time we got home, they were both really sick. We took Micah to the ER a few hours after we got home as his breathing was so bad.

January 3 we took Kathrynne to the ER as she just wasn’t doing well at all. She ended up testing positive for Flu A and her chest x-ray showed bronchitis. After they gave her fluids and her levels looked better, they released her.

We came back home and I cared for her and tried to take care of myself as I was also feeling under the weather myself. I did print my goals sheets out for January. (I had to laugh as I pulled this pic from Instagram stories and saw the typo shoorting that I’d missed when I posted this!)

January 5 we were back in the ER because Kathrynne was not doing well at all and we were concerned about her. We’re so grateful we were prompted to take her back in as her Flu A and bronchitis had turned into bacterial pneumonia and the beginning stages of sepsis. They caught it right in time and were able to quickly get her on antibiotics. She was admitted to the ICU stepdown unit for a few days.

After Kathrynne got out of the hospital and started on the road to recovery, we launched our brand-new budgeting freebie! (Have you downloaded it yet? If not, go grab it here!)
I accidentally spent $167 more on groceries than I meant to. Did you read about that crazy experience?

I tried my hand at making Bone Broth Hot Cocoa. And yes, it did taste somewhat chicken-y.
Jesse and I celebrated our 22nd anniversary at home (because Kathrynne was still very much recovering) by making a Home Chef meal together and watching a show.

It snowed and actually stayed on the ground (which usually only happens once a year (if that!) here in TN!

School was cancelled and everything was shut down for at least a day or two and we had fun in the snow!


We also launched our Budget Goal-Planning Worksheets in January! These were designed to help you pinpoint and clarify your financial goals and then map out a plan to actually follow through with them!

I came out to the kitchen and found her with pickles on her eyes. She told me she was “having a spa day.” 🙂

A friend of ours helped Silas and Jesse process the free $167 roast (see earlier post above) into steaks!
I tried a new recipe and it was a winner!! I posted the recipe for Homemade Granola Bars here. I highly recommend it!

I just realized I posted this picture right in between food… but such is life here! Silas had a collision at basketball practice and ended up with five stitches and a concussion — which meant no school for a bit, light school for the next few weeks, and not getting to play basketball for the rest of the season. He was such a trooper, though, and we’re grateful he’s made a full recovery!
I started doing meal prep sessions in January and this has been a HUGE help!

We had a triple date with good friends to celebrate all of our 22nd anniversaries!

We took Kathrynne out for her 20th birthday to go axe-throwing! The fact that she is healthy and felt up to going axe-throwing after the month she had was a HUGE praise in and of itself! I feel like she has a new lease on life!

One of my favorite breakfasts in January: yogurt mixed with protein powder topped with sugar-free granola and berries. Yum!

Welcome to my 2025 Stop Buying Store-Bought series where I challenge myself to learn to make items I typically buy at the store. Today, we’re learning how to make homemade flour tortillas! They might not be a big money-saver, but they are big on flavor and amazingly simple to whip up. Here’s my simple no-fail homemade tortillas recipe!

Now, some of you who have been here for a really long time will remember my post about why I don’t make my own tortillas… but here’s the thing: if you are making these just to save money, you won’t be saving that much by making them yourself. However, if you have time, care about the ingredients in your tortillas, or love the taste of homemade, fresh tortillas, you definitely want to try making your own.
Trust me on this, once you try homemade tortillas, you’ll have trouble going back to store-bought!
Plus, they are pretty easy and fool proof to make! And you can roll them out thinner or thicker depending upon what you like and what you are going to use them for.
I usually always change up recipes when I make them, but you will not believe it: I actually didn’t change anything when it came to the ingredients in the original recipe! I did, however, roll the dough out a lot thicker because I like thick tortillas!
The ingredients for this homemade tortillas recipe are really simple:
1. In a medium size bowl, mix the flour, baking powder, and salt.
2. Add butter, then pour in hot water.
3. Stir until the dough starts to come together.
4. Place the dough on a floured surface and knead with your hands for 1-2 minutes, or until it forms a smooth ball.

5. Put dough back in the bowl, cover dough with a damp towel, and let it rest for 10 minutes.

6. Divide the dough into 12-14 pieces and roll each one into a ball (they don’t have to be perfect).
7. Use a rolling pin or tortilla press to flatten each ball into an 8-inch circle.

8. Heat a skillet over medium-high heat.
9. Add a little olive oil, then place a tortilla in the pan.
10. Cook for 30-60 seconds until bubbles form on the surface.
11. Flip and cook for another 30 seconds until lightly golden.

12. Transfer to a plate and cover with a towel.
13. Repeat with the rest of the dough.
14. Enjoy warm or save for later!
Store in an airtight container for up to 3 days.

Today’s question is from Rachael:
I am so behind on my regular monthly bills, like my electric, rent, and water so every time I feel like I get close to getting caught up another month is here and I am behind all over again. I was without a job for 3 months and even though I have been working since September, I am still struggling and I cannot make a budget (that works) when my entire paycheck goes toward trying to get caught up. I still have to buy groceries and put gas in the car but I spend as little as possible in order to try to keep the lights on and not get evicted. I know there has got to be a better way and would really appreciate any advice. -Rachael

First, I want to say that I hear you. You’re working hard, you’re trying your best, and yet, it feels like you’re treading water and barely staying afloat.
I know that feeling because I’ve felt it, too. I remember when Jesse was in law school and our income was so meager and it felt like every penny we made went straight back into paying for the bare basic of necessities (which it did!). It felt like we’d never be able to get ahead and that everyone else was able to spend money and here we were barely able to afford basic things like groceries and didn’t even have money to shop at the thrift store.
(Yes, it wasn’t true that “everyone else was able to spend money” but it often could feel like that with where we were in life and how we were making choices that were very different — such as to not go into debt — when Jesse was in law school.)
But I want to encourage you — don’t give up hope! Your very desire to get on a budget is a huge step in the right direction of wise financial decisions and your willingness to make sacrifices and do the very best you can do is going to pay off!
Here are some suggestions I have for where you are right now:

When your paycheck is already stretched to the max, the key is to prioritize what must be paid. What are the absolute necessities that you must pay in order to survive?
These will usually be things like:
These essentials must come first. If you have limited income, make sure these are covered before anything else. Everything else is not as high of a priority for right now.
Tip: I recommend using our Budget Tracker to write down all of your fixed expenses. As you do so, think: “Can I live without this for at least short-term if I absolutely had to?” If so, it’s not an absolute essential and not something I want you to prioritize first.
Since you’re behind on your rent, utilities, and other bills, your first step is to reach out to your providers and landlords. Many companies have hardship programs, payment plans, or options to delay or spread out payments.
Call them and explain your situation. It might feel intimidating, but most companies are more willing to work with you when you communicate than if you just miss payments. Be honest. Be upfront. Don’t promise something you aren’t absolutely sure you can deliver on.
There is no shame in seeking help when you need it. If you are struggling with groceries or utility payments, check into local food pantries, community assistance programs, or non-profits that provide financial assistance for rent and utilities. Even churches often have programs to help those in difficult situations.
Additionally, if you have past-due utility bills, many states have Low-Income Home Energy Assistance Programs (LIHEAP) that may help cover some of your utility costs.
A budget doesn’t have to be fancy or complicated — it just has to work for your situation. Start with what you have, even if it’s just your paycheck going straight to your bills. Use our Budget Tracker to help you out.
If you’re in a situation where your income still isn’t covering your essentials, it’s time to increase your income (more on that in a moment).
When you’re behind, sometimes cutting expenses just isn’t enough and you need to bring in more income to catch up. If possible, look into:
Even a few hundred dollars extra a month can make a huge difference in getting you out of survival mode and onto more stable ground.
Tip: Post on your social media or Facebook page and let friends and family know that you are looking for some jobs you can do to earn extra income and you welcome any ideas or suggestions or projects they have that they need help with! I’ve heard from multiple people that this simple action has opened up doors they never would have thought of — and even led to long-term work!

It might feel like putting bills on a credit card or taking out a payday loan could offer some relief, but in the long run, it will only make things worse. The goal is to free yourself from the cycle of debt, not add to it. If possible, avoid taking on new debt while you’re trying to get back on your feet. Remember: this is a short-term situation. Be willing to make some really radical short-term sacrifices for long-term benefits!
I know it feels overwhelming right now. But I also know that even the most challenging financial struggles can be overcome. Keep making small steps forward, and don’t let setbacks discourage you. Progress is progress, even if it’s microscopic. Pay attention to and celebrate every win! It’s a baby step closer to where you want to go!
You are not alone in this, and you are not failing — you are fighting. You are working hard to turn things around, and that matters. The fact that you’re asking for advice and seeking solutions tells me that you are determined to make this work.
Keep pushing forward, keep looking for ways to grow, and don’t lose sight of the fact that this tough season is just that — a season. You will get through this. And one day, you’ll be able to look back and see how strong you were, how much you learned, and how far you’ve come.
