You all loved the Meal Prep Monday post I did last week and asked for more, so I’m going to try to regularly share these as I’m able!
This weekend, I meal-prepped things for our dinners (plus a few extra fun things!). It feels SO good to have dinners mostly done for the week!

What I Meal Prepped
Taco Meat (2 pounds browned ground beef with one packet taco seasoning — I set aside a serving of the browned ground beef without taco seasoning for Silas to use for a lunch this week. He loves to make recipes with ground beef and potatoes or ground beef and rice. I also set aside some for the spaghetti casserole.)
Spaghetti Casserole (Spaghetti Noodles layered with jarred sauce and browned ground beef and cottage cheese mixed with egg and mozzarella cheese. Sprinkle with more mozzarella and bake at 350 degrees for 30 minutes or until bubbly.)
Ham & Beans (I had a mix of canned beans and some ham in the freezer — all that I’d gotten on sale over the past 5 months or so. I dumped the beans into a pot, chopped the ham up into it, added some water, and boiled it for about 10 minutes and then turned the heat down and let it simmer for 30 minutes.)
Homemade Crackers (These turned out SO well — recipe coming later this week!)
Cinnamon Roll Muffins (If you love the taste of cinnamon rolls but the ease of muffins, these are a great option! I’ll share the recipe soon, too!)
Healthy Peanut Butter Protein Balls (These were so healthy — PB powder, applesauce, and protein powder — that I was surprised they tasted as yummy as they did!! I’ll share the recipe soon, too!)


Menu Plan This Week
Sunday — Scrambled Eggs, Chicken Sausage, Fresh Apple/Carrot/Orange/Beet Juice
Monday — Ham & Beans (already made), Honey Cornbread, and Apple Slices
Tuesday — Spaghetti Casserole (already made), Homemade Rolls, Steamed Veggies
Wednesday — Dinner out for Kathrynne’s 20th birthday
Thursday — Just Bare Chicken Nuggets, Homemade Bread, Tater Tots, Steamed Veggies, Applesauce
Friday — Taco Bowls (taco meat, rice, beans, lettuce, tomatoes, cheese, and homemade tortillas)
Saturday — Leftovers or Frozen Pizza


I like the ideas for meal prep. Keep up the excellent insight. Eggs are cheap in my region.
Our oven is down until a part arrives 2/12, so I will be utilizing the stove top or instant pot for all of our meals. One of our new favorite meals that is simple to make (all in one large pan on the stove top) is Chris Beat Cancer’s lentil tacos. I’ve only planned two other meals because we had family in town and just put Christmas away, so I will be back to the store later this week. In the mean time, we are also having baked potatoes topped with greek yogurt and cheese served with green beans. I don’t recall the third meal, but it is also from the Chris Beat Cancer Cookbook. Foods I usually make ahead each week are wheat bread, hummus, date dip, and some type of healthy sweet such as a nut butter and dark chocolate type “cup”, protein balls, or others of the like.

I love these types of posts. I’m going to batch cook tomorrow and plan to make a bunch of muffins to freeze. I recently found Heavenly Homemakers website again and Laura (?), I think is her name, shares a recipe of scooping the muffin batter into liners and the muffin tray and then freezing it. You can pop a bunch of frozen batter muffins into an airtight container in the freezer. Then, when you want to bake them, you put them in a muffin tin in the fridge overnight and pop them in the oven for fresh muffins in the morning! Apparently it works really well. I’m going to try it. Since freezing muffin that are already baked muffins and reheating sometimes make them dry. 😊

I’m surprised you’re doing scrambled eggs and breaded chicken as dinners!? Eggs are $7/dozen by me! Might as well be eating meat for that price!
Eggs haven’t been at all as expensive here as they are elsewhere! Plus, it’s a super easy meal that we love. (Kroger has eggs and 18-count for $3.99 this week!)
So you cook everything ahead of time, then just stick it in the fridge and warm it up on the designated day? When I’ve seen meal prep before, you typically prepare, but don’t cook it. How does that work? How do you heat it up so that it tastes fresh?
Yes, unless it’s a casserole. I’m not cooking those. But soup reheats super well and so does meat.
