I feel so much healthier and energetic when I eat a lot of salads and fresh fruits and veggies, so I’ve worked to find creative ways to make more salad eating possible without spending a lot of time and money to do so.

My Weekly Salad Ideas For Lunch (10 Different Examples!)
Since I’m a visual person, I thought it would be fun to take pictures of my salads every day for two weeks to show you examples of what my daily salads look like.
You’ll notice the 10 salads below are super simple. I just throw together whatever I have on hand for yummy variations each day.
I hope this inspires you to maybe eat more salads — or to see that it doesn’t have to be expensive or time-consuming to eat healthfully!

Green Salad Ideas: Why You’ll Love Eating Daily Salads!
Daily salads are a great way to use up ALL your leftovers, regularly clean out your fridge and pantry, and incorporate lots more greens and veggies into your diet.
You’ll save yourself so much money buying specific lunch foods (or going out for lunch), you’ll save time as you don’t need to prepare anything from scratch, and you’ll likely save a few calories as well!
Also, daily salads are a great option if you get bored eating the same things over and over again as no two days are ever alike with my leftover salads.

Meal Prep Salad Ideas: Tips to Make It Easier
Instead of thinking of it as “making a salad”, you might consider thinking of it as “serving your leftovers on lettuce” because that’s essentially what I do with my daily salads!
Truthfully, you can stretch almost any food by simply plating it on a bed of lettuce or other salad greens. A forkful of chicken might not be enough for an entire meal, but added to a bed of lettuce with some cheese and a hardboiled egg gives you a protein-packed lunch that will really fill you up!
Look through your fridge and pantry and pull out a few items that sound good to you. Put them on a bed of lettuce, add a little cheese, toppings, and a favorite dressing/oil — and voila, you have a salad! Some of my favorite toppings include marked down fresh fruit and veggies, leftover steamed or roasted vegetables, hard boiled eggs, or leftover meat.
It typically takes me no more than 3 minutes to put together my lunch salad. Who says eating healthfully has to take a bunch more time? No meal prep is even really required!

Salad Ideas For Lunch
Ingredients
- lettuce, spinach, or other salad greens
- cheese whatever you have on hand
- meat leftover chicken, turkey, ground beef, taco meat, brisket, salmon, bacon
- hard-boiled eggs, beans, or another protein
- veggies raw or cooked — whatever you had in the house
- fruit fresh or dried are both yummy
- something crunchy sunflower seeds, nuts, croutons, crushed chips
- a favorite oil, dressing, or marinade
Instructions
- Fill your plate with lettuce, greens, or bagged salad.
- Add odds and ends you have in the fridge. (Think leftovers, proteins, fruits, veggies, meats, etc.)
- Add extra toppings you love. (Cheeses, nuts, seeds, dried fruits, etc.)
- Drizzle with oil, vinegar, or your favorite dressing.
- Eat and enjoy a deliciously frugal, healthy lunch!

The 5 Books I Finished in January

I set a goal to finish 80 books in 2019 and a second goal that 40 of those books will be books I already own.
(You can see which books I picked to read from those I already own here).
Some of you have told me you think I shouldn’t set book goals and I should just enjoy a book for a book’s sake. Here’s the thing: I actually find book goals fun and motivating. And so long as I’m really enjoying the books in the process, I’m going for it.
By the way, I’m truly loving using GoodReads to track my reading.
Here are the 5 books I finished in January and my honest thoughts:

#1 and #2: Angels Walking & Chasing Sunsets
I listened to both of these on the Libby app for free. They are the first two books in a fictionalized series of how angels are walking amongst us and helping to protect us on a daily basis (based upon verses like Psalm 91:11 and Hebrews 13:2).
While I disagreed with some of the theological implications and don’t know that I agree with some of the ways that she presented angels as humans, I found it so good to remember that there are spiritual forces — both good and evil — around us at all times and that there is power in the name of Jesus.
I also found it encouraging to be reminded how God sometimes uses really hard things in our life to turn into some of the most beautiful things. It’s easy to forget this.
The audiobook is narrated by two different voice actors (depending upon who was narrating each chapter in the books) and I thought it was well done and engaging.
My verdict: 3 stars
#3: My Morning Routine
This book is a collection of interviews about the morning routines of a very varied group of people — authors, artists, business owners, and so many others. Some are high profile people. Some are people you’ve never heard of.
But I found it inspiring to read about how so many different people start their mornings with intention. There were many practical ideas and takeaways… and it was also just a great refresher on how to start your mornings well and how the things you do first in the morning impact your entire day.
I will say that there was some repetition in how many people started their mornings and there were also some vastly differing viewpoints on many topics (such as beginning the day with exercise or not, using an alarm clock or not, what you should eat first thing in the morning or whether you should skip breakfast altogether).
Note: this book is not written at all from a Christian standpoint and it profiles a wide variety of people and you will likely not agree with the beliefs or practices of some of the people featured if you are a Christian.
My verdict: 3 stars
#4: Eat Cake, Be Brave
I listened to this book on the Libby app for free and I loved hearing this in her voice. I felt like it made the book come alive and seem so much more authentic.
Melissa has gone through so much in her life from weight struggles, to infertility, to infidelity, to losing a child, to rejection. And almost all women will be able to relate in some way to her story and her bravery will inspired you.
I found myself want to jump up and down and yell “preach it” as I was listening… and I’m not even a very charismatic sort of person. 😉 And I loved the book so much that I ended up buying a copy from Amazon after I finished listening to it since I wanted to have it in my library so I could re-read parts of it and loan it out to others.
My verdict: 5 stars
#5: Deep Work
This book is actually one I had planned to read in 2018, but I’m really glad I saved it for the beginning of 2019 because it was the perfect book to kick off the year.
Deep Work is a little more scholarly than most books I read, but I’m so happy I stuck with it because it really challenged me to think of how I’m approaching life and work and whether I’m investing time every day in what the author refers to as “deep work” — that kind of work that is meaningful and really makes a difference.
The author encourages you to have periods every day where you are completely offline and not distracted by all of the hustle and bustle of life to allow for this “deep work”.
One of my hopes for 2019 was to do a better job of compartmentalizing my work and family life so that they are better separated and I can be fully present and I loved many of the thoughts and strategies presented in this book to help make that a reality. This book provided practical suggestions and helpful ideas in this regard and inspired me to continue to prioritize this compartmentalization.
If you struggle to focus or get things done, if you wish you could be more structured in your day, or you’d like to look back on your week and guarantee that you devoted time to work that matters, I’d definitely recommend reading Deep Work.
My verdict: 5 stars
Book I Started But Didn’t Finish
Beartown. I tried. I really tried to get into this book since I loved A Man Called Ove. But eight chapters in, I just couldn’t deal with the crass language of the teenagers, so I gave up on it.

Bible Reading Progress
I started January 1, 2019 with my commitment this year to begin every day with 30 minutes of time in God’s Word. I’m reading through the New Testament using the She Reads Truth Bible plans at the beginning of each book of the Bible.
I finished all of Matthew and read half of Mark in January.

How to Throw a Starbucks Birthday Party on a Budget

My daughter turned recently turned 14 and her most favorite thing in the world is to go to Starbucks — so I decided we could throw a fancy and frugal Starbucks birthday party for her and seven of her friends.
Here’s how I was able to throw a Starbucks birthday party on a budget…
What I Bought:
From Dollar Tree = $31
- white goodie bags
- tablecloth
- 1 package balloons
- 1 package green streamers
- 1 package plates
- 1 package napkins
- 8 white mugs
- Piñata fillers (candy, chapstick, face masks, nail polish, etc.)
Walmart: = $26
- Cake pop sticks and candy melts
- Piñata
- Starbucks drinks for prizes
Aldi: = $5
- Cake mix
- White frosting
- Popcorn
I also bought the Starbucks stickers I used on the goodie bags from StickerMule.com. They were running a special… 10 stickers for $1 shipped!
How We Partied:
I printed the “Frappy Birthday” banner off the internet at no cost, pasted it on construction paper, cut it out, and hung it up.
We hung green and white streamers, white balloons, and used all white and green paper products.
Each girl got to pre-order a Starbucks drink and it was waiting for them when they arrived to the party. The total for 8 drinks was $32, but I used 15,000 Kelloggs Family Rewards points to buy 2 Starbucks gift cards and that took off $10 — only $22 for the drinks!!
When I picked up my drinks, I asked for a few empty cups for the popcorn and the cake pops. Starbucks provided these at no charge.
At the party, each girl got to decorate their own coffee mug using paint pens and sharpie markers I already had.
We also played a “Who knows the birthday girl best?” game which I made and printed at home for no cost. The prize was a Starbucks drink purchased at Walmart.
Using old coffee beans I already had, I set up a “Guess How Many Coffee Beans Are in the Jar” game. The winner got a Starbucks drink from Walmart.






Total spent for this very fancy and VERY fun birthday: $85 before tax!!!
My daughter and her friends had so much fun and she said it was one of the best parties she’s ever had. All for well under $100 and 8 girls! There you have it — a Starbucks birthday party on a budget!

Every month in 2019, I’ll be sharing a photographic peek into the previous month. I thought this would be fun to give you a behind-the-scenes look at our month and recap some of the highs and lows and special memories of the month.

I started January 1, 2019 with my commitment this year to begin every day with 30 minutes of time in God’s Word (I’m reading through the New Testament using the She Reads Truth Bible plans at the beginning of each book of the Bible.)
We then hosted friends for New Year’s Day Brunch and games. The guys made breakfast for us while the moms sat and drank tea and coffee. It was the best!
After Brunch, we spent the rest of the day hanging out and playing games — including learning how to play Unstable Unicorns.
I’ve been loving using the Organize in 5 system for doing different organizational projects this year — including cleaning out my cookbooks.
I love tea and in January, I shared some of my very favorite teas.
This checklist system has been working SO well for me and is really helping to keep me on track with my daily habits!

We spent a lot of time in the bleachers at Kathrynne’s basketball games this past month. It was so fun to see the progress her team made and how well they did. And we often stayed and cheered on her friends in their games, too. (And I loved seeing Kaitlynn and Silas hang out with her and her friends while we cheered on the other teams from her school!)
(On the other hand, I’ll admit that it’s going to be nice that her season is over in a week so that we can have more dinners at home and evenings where we’re not out late!)
I read Deep Work as the first book I read in 2019. It was a fantastic read and I’ll be sharing more about it in my book update post in the next few days.

I heard from so many of you who say that you love this brand, too.

Well, after 5 weeks of pain after my car accident, many chiropractic visits, many x-rays, and an MRI, we finally found at that my hand/wrist was indeed fractured.
While I wasn’t excited that meant I’d need to wear a cast for 4 weeks, I was so grateful for a diagnosis that explained all the pain! A big thank you to my chiropractor who pushed me to go to the specialist and was sure that there was something fractured that all the x-rays weren’t showing.
Y’all, I have such new compassion for people who deal with chronic pain! I honestly cannot imagine what it would be like to deal with incessant pain like this for years and years — as I know many people do.
Also, I am grateful for modern technology and cool FastForm casts that are waterproof and can be taken off so I can wash my hair. How times have changed since I broke my wrist as a young girl!
In other happy news, we also bought a new-to-use car to replace the car that was totaled in the accident. We were so grateful to get everything taken care of with the insurance!
The car accident was about three seconds total, but those three seconds have meant hours and hours and hours of doctor’s visits and insurance phone calls and research and car shopping, incessant and sometimes excruciating pain, sleepless nights, working through a lot of anxiety that resurfaced as a result of this accident, and juggling one car for the past few weeks.
And yet, I keep thinking how much I have to be thankful for. How much worse it could have been. How so many of these things are just a small inconvenience compared to what so many others are going through.
This has been such a good opportunity for me to practice what I preach — that you can’t always choose your circumstances, but you can always choose your attitude!
I had so much fun shopping and getting great deals in January!

I bought a Fitbit for myself for Christmas and I absolutely love how it is motivating me to move more and take better care of myself!

Those who might be sort of on the outside, the fringes. Those who might not be seen as the “cool kids”. Silas’ class performed Black Ships Before Troy this month… which was so fun to get to watch!

This girl. Man how we love her!! And it’s hard to believe she turns 14 this week!
She has the most caring, compassionate heart. She’s deeply loyal. She has such a heart for Jesus and others and she’s always looking out for the underdog.
She’s also full of spunk and life and sarcasm… and if you need a meme or gif to make you laugh, she’s your girl!
She’s grown up so much the last two years — both literally and figuratively — and yet, she still thinks I’m cool (except when I wear those one shoes) and loves to hang out and talk with me!

Also, she’s a girl after my own heart — all on her own, she decided to sign up for a bunch of birthday freebies that different stores and restaurants offer. We ALL got to benefit when one of those freebies was a coupon for a completely free dozen doughnuts from Krispy Kreme.
I love our movie nights and late-night talks (even if it means I don’t get as much sleep these days!) and one of my favorite parts of the week is our Sunday morning coffee dates.
I don’t know what the future holds for this girl, but I can’t wait to keep standing on the sidelines and cheering her on… and I might wear those ugly shoes, just to embarrass her!

Kathrynne celebrated her birthday by a little family birthday party, lunch out with Jesse, and going to a movie with me. She also had a fun night with a few close friends. I love this picture that I got of them all making themselves at home in our house. It makes me so happy when people are comfortable enough at our house to just climb up and sit on our countertops!

One of Kaitlynn’s school projects this month was to create a diorama of a dream world. This was part of it in the making. I didn’t get a picture of the finished project but it was so adorable!
I finally went through my books and picked out the 40 books I plan to read in 2019.
I also organized underneath the bathroom sink and my purse. And I’m happy to tell you that I have kept them organized for 5 days!

Last night, she asked me who my best friends were. I listed off a few and then she said, “What about me? Am I one of your best friends? Because you are totally one of my best friends.”
Y’all. THIS. This is what it’s all about.
I know some parenting experts would say you shouldn’t be friends with your child. And my kids aren’t grown and gone so I still have plenty of parenting to do and things to learn and ways I’ll fail — and you probably should listen to the experts and not to me.
BUT, after years of changing diapers and midnight nursing and waking up every two hours and potty training and cleaning up spills and working on teaching the same thing over and over again, I can tell you that it’s pretty downright amazing to now have kids who love to hang out with me, who need very little help from me, and who ask for my counsel and advice (they don’t always follow it, but they do ask for it!)
Oh yes, we have rough days and hormones are a real beast at times, but we have so many beautiful, hilarious, and ridiculous moments and memories to make up for it.
Also, my kids love to take selfies with me where I’m being a dork. They laugh and laugh and I’m happy to oblige.
All you mamas of littles: your day with backseat corny selfies and laughing with your very self-sufficient older kids is coming. And it’s AMAZING!

We spent $66 on groceries this week!
I’m currently challenging myself to stick with a $70 grocery budget for our family of five. This includes almost all of our breakfasts, lunches, snacks, and dinners + most household products (toiletries, laundry soap, etc.).

I was so happy with all of the groceries we got this past week. And I was especially excited to realize we now have 25 pounds of meat in the freezer and a pantry that is really, really full. All that has been stockpiled a little bit at a time on our $70 grocery budget.
An Important Note for Those Who Are Feeling Frustrated
Some of you have been frustrated recently that I share my groceries because you don’t have Kroger. Here’s what I want to encourage you with: instead of being frustrated, focus on what you CAN do. I’ve lived without a Kroger and been able to still have a small grocery budget. It just takes a can-do creative attitude… and a willingness to do the best you can with the time and resources you have.
A few tips for beginners:
- If you’re new to trying to cut your grocery bill, start by having a grocery budget, working on sticking with it, and planning a menu based upon simple, inexpensive meals.
- Then, step it up, by planning your meals based upon what is on sale at the store and what you have on hand.
- Next, pay attention to why items are at their lowest prices and start setting aside a little bit of your grocery budget to stock up on items when they are at their lowest prices.
- The more you do this, the easier it will get to lower your grocery budget and slowly build a stockpile of food that you got at a discount!

Speaking of salads, I’ve gotten a lot of comments and messages about the fact that I’ve mentioned that I eat two salads a day in recent weeks.
So I decided to show people practically what this looks like for me. I’ve been posting my lunch salad on Instagram stories — and I’m loving that it’s inspiring so many of you to also eat more salads!

It’s usually a bed of Romaine or dark greens I’ve gotten marked down at Kroger (these are pre-washed and ready to go so I literally just stick them on my plate) topped with whatever odds and ends I find in the fridge (other marked down veggies, fruit, leftover steamed or roasted veggies from dinner the night before, a hard boiled egg —we make a batch in bulk in the Instant Pot each week, or leftover meat from last night’s dinner.)
It typically takes me no more than 3 minutes to put together my lunch salad. Who says eating healthfully has to take a bunch more time?
And then for dinner, I usually just put the main dish on a bed of lettuce. That might sound gross to you, but I’ve gotten so used to it that it doesn’t bother me at all.
I feel so much healthier and energetic when I eat a lot of salads and fresh fruits and veggies, so I’ve worked to find creative ways to make more salad eating possible without spending a lot of time and money to do so.
Also, for those who are wondering, I rarely ever use dressing. Yes, I know, that might sound crazy but it’s true!

Kathrynne and I made Homemade Pizza for Friday night and I showed her how we used to make pizza when Jesse was in law school and we’d only buy one bag of chicken every other week most weeks (that would typically be the only meat we’d be able to afford in our budget), so we’d just put a tiny bit of meat on the pizza usually (see example above).
It was good to remember those days. I never want to forget and I want our kids to know this part of our story.

Note: When you see the meals below, please remember this: I buy ahead often. Which means that when I find a great deal on something I know we’ll use, I buy as much as I can afford in our budget to have on hand.

How I Did On My 2019 Goals in January
It’s February 1, 2019. And it’s time to check in on our goals! How are you doing on the goals you set for 2019?
I spent some time today reviewing January and reflecting on the blessings of the past month and the lessons I learned. I also looked at my goals and made not of how I was doing in each area. (If you missed My Goals for 2019 post, read it here.)
In order to keep myself accountable (and because I know some of you really enjoy these posts) I’m going to be sharing a goals update post at the beginning of each month. I hope that this will not only motivate me to be focused and intentional this year, but I hope it might also inspire you in the goals you set for 2019.
So here’s my goals update for February 1, 2019:
Personal Goals
1. Read 40 books I already own. (I’m using GoodReads to track my reading this year!)
Update: I finished 5 books in January — 2 were books I already own and 3 were audiobooks I got free from the Libby app. Look for a Book Update post in the next few days where I share more about my thoughts on the books I finished.
2. Slowly read through the New Testament using the She Reads Truth Bible reading plans at the beginning of each chapter.
Update: I finished Matthew and am halfway through Mark.
3. Listen to 2 audiobooks per month. (I use the Libby app to get these for free.)
Update: I listened to 3 audiobooks in January.
4. Complete all of the Organize in 5 Diary tasks to get our home more organized and set up better organizational systems. (Psst! Did you get yours? It’s just $9 right now.)
Update: This has been going so well and I’m happy to report that I have been 100% keeping up with this. YAY! You can see two posts I did on some of my organizing projects: Cleaning Out the Cookbooks & Organizing My Purse & Bathroom.
5. Stay offline for 4 hours per day, 5 days per week. (I share more about why I chose this goal here.)
Update: This has been going well and I hit it at least 5 days per week every week in January!
6. Leave my phone in the basement every night. (I talk more about what inspired me to make this goal here.)
Update: I did this every night but two nights in January!! It has made SUCH a difference and I plan to do a full post on this and just how much it has impacted me. Stay tuned.
7. Go to bed before 10:30 p.m. 5 days per week. (I’m using this little spreadsheet I made to track most of my personal goals)
Update: I didn’t do this perfectly, but I did a MUCH better job of going to bed earlier in January and am happy to report that I went to bed before midnight every single night in January — which is definitely progress for me since I have a tendency to stay up really late on weekends and then sleep in and that throws off the whole week! I’ve been a lot more consistent in my bedtimes and wake up times and it has definitely made a difference!
Marriage Goal
8. Go on an overnight trip with Jesse without the kids.
Update: We got a trip booked to Destin, FL at the end of April!! We’re renting an AirBNB with two other couples and are so excited about it! We also are looking at possibly doing one other weekend trip later in the year. We’ll see!
Motherhood Goal
9. One-on-one time with each child at least 3 times per week. (I am planning to dedicate 40 minutes per child after dinner each evening at least three nights per week to hang out and spend time with each child individually.)
Update: This has been going so well! And I’m thrilled to report that I hit this every week in January!
Family Goal
10. Take the kids to at least two continents and 4 states we haven’t traveled to. (We’re hoping to travel to Europe in the summer and South America at some other point during the year. I have travel alerts set up to track the best prices for flights and am hoping to find a great deal to snag in the next 4-6 months!)
Financial Goals
11. Pay cash to redo our room and renovate our bathroom (we have to pull out the shower and put in a new one because it was installed incorrectly and is leaking and ruining the floor/wall and we want to do a few renovations while we’re at it + we want to finally decorate our room — we left it really bare when we moved in and decided to wait to prioritize it in the budget).
Update: We had a contractor come over and chat with us and take measurements. We’re waiting on an estimate.
12. Pay cash to paint the main floor of our home.
13. Fully fund our Emergency Fund (This is a carry-over from 2018 and we are hoping to have this done in the next few months).
Business Goals
14. Redo/set up a much more intentional customer acquisition experience for all three of our email newsletters.
Update: We’ve been hard at work behind the scenes working on this and made some BIG progress in January already!
15. Finish launching the rest of our beginner Your Blogging University courses. (If you want to start a blog, be sure to check out my other site, Your Blogging Mentor.)
Update: I’m working on my next course, Monetize Your Blog, and it’s going to be a bigger/more comprehensive course than I’ve ever done but I hope to have it ready to launch at the end of March! Stay tuned!
16. Launch a Blog Coaching/Accountability Group membership. (I’ll be opening this up to a very limited number of people in January of 2019. Stay tuned!)
Update: We launched this to 100 people at the end of January and it is going SO WELL and I am just loving it already. We’ll be opening it up to more people in a few months!

I tackled two decluttering projects yesterday — one that was part of the Organize in 5 Diary and one that I was inspired to do because of the Organize in 5 Diary…

Yikes! I’m embarrassed to show you this. But here’s some real-life for ya!
I see this every morning when I open the cupboard to pull out things to get ready in the morning and every night when I pull out things to wash my face and get ready for bed.
And every day, I think, “I really should make time to organize it.” And every day, it doesn’t happen.
Until yesterday.
I was supposed to go to the kids’ school for morning chapel and then to discipleship group at church, but school was delayed due to weather and discipleship group was cancelled due to weather.
So I got inspired and tackled this mess of a cupboard!
I pulled everything out, put things that didn’t belong where they needed to go, put some stuff in the Goodwill tub in the garage, threw some stuff out, and re-organized what remained.

SO much better! And it made me so happy to open up the cupboard last night and this morning and see the above.
I even brought Jesse into the bathroom to show him how amazing it looked. (Please tell me I’m not the only weird person who shows off their accomplishments to their spouse like that!!)

Next up, I tackled the Organize in 5 Diary upcoming project (I’m a little ahead on the projects right now!) to clean out my purse. Er, diaper bag.
But let’s pretend it’s a purse. (I almost always carry a big bag because I often am lugging my laptop in it, too! Well, and I may also be a Boy Scout type personality and go for the “Always Be Prepared” slogan in most of life, too.)
I dumped everything out, wiped out the inside of the purse, and went through the contents. I put the items away that didn’t belong, I threw out the items that were trash, and found a few surprises along the way (see below!)

And then I made sure I had all of the essentials and put everything back in in a much more organized fashion…

That feels so nice to have my purse re-organized. And maybe it will last for a few weeks — or longer! We’ll see! 🙂

How We Changed Our Financial Blueprint

Whether we realize it or not, the way we handle money is primarily a result of a template, set in childhood and reinforced by our parents. In other words, we tend to spend and save money much like our parents did.
This financial blueprint is a strong force in our lives, and if it’s not a fiscally strong one, it can take a moment of crisis to overcome it. This is my story.
My mother was widowed at the age of 42, with four children and no idea how much money was coming in or where it was all going. When I was 18, she told me tearfully one day that she and my father had never lived with a budget. He just made money every month and they paid the bills. There always seemed to be enough money. She was terrified!
Even though I watched her go through this experience, I didn’t live with a written budget (or any spending plan) until I was well into my 20’s. I worked with the only blueprint I had ever known — much like my parents, I just made money and hoped that there would be enough to go around.
Two moments of terror stand out in my mind.
The first, when I was 20. I had moved out of my mother’s home and was living with two roommates. One evening, my bank account dipped to just $25 and the ATM would not let me withdraw any money. My gas tank was nearly empty. I prayed every day on the way to work that week that I would make it there and back without the car dying. I got paid at 4pm, and by 4:15pm I was at the gas station!
The second incident occurred when I was 24. My husband and I had been married for just two months and our checkbook indicated an almost zero balance. My stomach plummeted into the pit of my stomach. My mind reeled as I realized we had spent nearly every penny of our wedding cash gifts in just a few weeks. If we didn’t make immediate changes, we would be in big trouble in a very short time.
That’s when the light went on!
I worked at a Christian radio station and a man named Larry Burkett had just begun a daily program called “Money Matters.” It was the first generation of live Christian money management call-in programs. I listened carefully and began to implement Larry Burkett’s suggestions.
Within weeks, I had plugged into some great authors and teachers. I read a lot of books. I figured out what ideas I could implement right away, and created a list of ideas to consider for the future. I learned to cook from scratch and how to track my expenses.
We focused on one or two areas at a time. When we had those areas streamlined and under control, we move on to another couple of areas.
Over the next thirty years, we rewrote our family’s financial blueprint.
We gained financial traction as we lived within our means. Although we made a salary which was significantly under the national median income, we paid off our first mortgage in five years. We brought up four sons in our tiny two bedroom bungalow, while saving money to pay cash for our second home.
I won’t tell you that it was easy… because it wasn’t!
At times the road seemed long. But, now I see my 20 and 22 year old sons living on a written budget, paying cash for automobiles, planning for the future, and sharing financial principles with their peers.
I realize that our change wasn’t just for us. It was also for them!

Infertility and Why We Chose Open Adoption

I’m doing something I’ve never done on my podcast before this week… I’m doing an entirely interview-driven episode.
I usually try to keep interviews with guests to around 15 minutes and then we devote the other 15 minutes of the podcast to other segments. But as I was prepping for this particular interview, I just had this feeling that I needed to go longer in the interview. That in order for you to really hear the story well, I needed to allow the entire 30 minutes for the interview.
So that’s what we did — and I hope that this story and interview blesses you deeply. I truly believe it will.


My guest on this podcast is Rachel Nielson. She and I first met when she traveled with me and a small team of blog readers to South Africa (you can read about her thoughts on our time there and see a few pictures here.)
Rachel is joining me today to share her incredible story of infertility and adoption. But more than that, she’s going to share how she walked through learning to love someone when it was hard to love them and how she will never regret that decision.

We Spent $70 at Walgreens, Publix, and Kroger last week
I’m currently challenging myself to stick with a $70 grocery budget for our family of five. This includes almost all of our breakfasts, lunches, snacks, and dinners + most household products (toiletries, laundry soap, etc.).

A number of you have been asking if I can go to stores other than Kroger… and so I’m going to try to make that happen, if it works out in our schedule and there’s a good enough deal warrant going to Publix or Walgreens or CVS or Sprouts or Aldi. We’ll see!
(As most of you know, I drive by multiple Kroger stores on an almost-daily basis. So it makes it SO easy to pop in there. Most of the other stores require going out of my way a little to shop at them, so that’s why you don’t see me shop at them as often. Plus, I’m just so familiar with Kroger and usually find such great deals there, that it’s hard for me to sometimes want to go to other stores!)
This week, Jesse and I were right by Publix and Walgreens one of the days and I had a few minutes, so I ran in to get a few deals. Plus, I went to Kroger three different times.
Here’s what I bought:
Kroger Shopping Trip #1 (pictured above):
- Back to Nature Cookies — $2.99 — used $1/1 printable + $2/2 coupon that had printed for me at Kroger recently = $0.99 each + submitted for 3 $1/1 Ibotta rebates = free after coupons and rebates
- Bai Bubbles — free with Free Friday coupon
- 3 bags of Simple Truth organic tortilla chips — $1.49, used $0.50/1 Kroger Digital Coupon (can be used 5 times per transaction) = $0.99 each
- Lemon Juice — $2.49
- 1 bag Simple Truth frozen veggies — $1.29, used $0.50/1 Kroger Digital Coupon (can be used 5 times per transaction) = $0.79
- 1 bag of apples — marked down to $0.99
- 1 bag of peppers + radishes — marked down to $0.99
- 1 bag of sweet potatoes — marked down to $0.99
- Total with tax = $12.56




Kroger Shopping Trip #2:
- Colgate MaxFresh — $1.99 when you buy 6 participating items, used $2/1 Kroger Digital Coupon = Free after coupon
- 5 packages of Cheese — $2.99 each when you buy 6 participating items
- Kroger half & half — $1.79
- Natural Bliss Pumpkin Spice Creamer — marked down to $0.29 (I don’t think I’ve ever tried this before and I am loving it in my tea, especially at this crazy price!)
- Kroger Unbleached Flour — $1.49
- Kroger Whole Wheat Flour — $1.99
- 5 cans of Simple Truth Organic Refried Beans — $1.19 each, used $0.40/1 Kroger Digital Coupon (can be used up to 5 times per transaction) = $0.79 each
- 4 pounds of ground turkey — marked down to $1.99 per pound
- Romaine Lettuce — marked down to $0.50
- Dole Salad Kit — marked down to $0.89
- Sweet Baby Ray’s Hot Sauce — free after Kroger Digital Coupon
- 1 bag of tomatoes — marked down to $0.99
- Total with tax: $37.28

Pineapple and blackberries are just $0.99 at Kroger right now!

I was super excited to find these tomatoes just $0.39 per can when you buy 5 participating items at Kroger!

Kathrynne signed up for birthday freebies since it’s her birthday week and when she signed up for Krispy Kreme she got a coupon for a completely free DOZEN doughnuts!! Needless to say, we’ve all been enjoying those! I may or may not have had one for breakfast! 😉
What We Ate This Past Week
Note: When you see the meals below, please remember this: I buy ahead often. Which means that when I find a great deal on something I know we’ll use, I buy as much as I can afford in our budget to have on hand.
This means that you aren’t going to see all of the groceries my shopping trip that I used to make all of the meals we ate.
Please also remember that I’m putting this out there and it’s not a perfectly balanced menu. This is just really what we ate — and I hope that it encourages you to see the real-ness and lack of perfection here. ?
Breakfasts:
- Cereal, Oatmeal, Scrambled Eggs, Hard Boiled Eggs, Toast, Banana Chocolate Chip Muffins
Lunches:
- Peanut Butter & Jelly Sandwiches, Cheese Quesadillas, Cheese/Crackers, Hard Boiled Eggs, Salad, Leftovers, Clementines, Cookies
Snacks:
- Cheese/Crackers, Popcorn, Apples, Cookies, Banana Chocolate Chip Muffins, Brownies, Chips/Salsa, Goldfish
Dinners:
- Sunday — Frozen Pizza, salad
- Monday — Leftovers, apples, chips & salsa
- Tuesday — Baked Chicken, mashed potatoes, Roasted Broccoli
- Wednesday — Brats, Sweet Potato Fries, salad
- Thursday — Refried beans with cheese, chips, lettuce (sort of a meatless build-your-own taco salad)
- Friday — Dinner at Chipotle for Kathrynne’s birthday (we had some of her friends over), brownies
- Saturday — Snack-y dinner (fend for yourself)
Total spent on groceries: $70.35
