Looking for a delicious breakfast that packs a bunch of nutrients to start your day? Try these protein-packed, peanut butter banana pancakes!

Jesse joined a gym here in TN not too long ago and has been working toward some ambitious fitness goals. As a result, he’s been looking for recipes that pack a nutritious punch.
Yesterday, he made these Peanut Butter Protein Pancakes and we thought they were pretty good — especially for their high protein content.
Ingredients for Peanut Butter Protein Pancakes
- 1 scoop protein powder (can leave out if you’re not interested in high protein content)
- 2 Tablespoons whole-wheat flour (or almond flour)
- 2 Tablespoons Greek yogurt or cottage cheese
- 1 teaspoon baking soda
- 1 Tablespoon peanut butter
- 4 egg whites
- 1 ripe banana (medium sized)
How to make these protein-packed pancakes
1. Put all ingredients into a blender (we used our Vita-Mix) and blend together until thick and creamy.
2. Cook on a greased skillet or griddle until golden brown on both sides.
3. Serve immediately with butter and maple syrup.

My Morning Routine Challenge for June
I created a new morning routine and am working on sticking with it.
I’m also hoping to keep up with January’s habit of exercising at least 4-5 times every week, February’s goal of eating a big salad at least six times a week, March’s goal of drinking 8 glasses of water a day, April’s goal of cutting back on sugar, and May’s goal of getting at least 7.5 hours of sleep every night.
This Week’s Progress:
So I still have a long way to go when it comes to my morning routine, but I’m encouraged at the progress I’m making. And I have good news to share: I went to bed at 10:15 p.m. last night and got up at 5:15 a.m. this morning.
Yay!! Let’s hope this is the start of new good habits for me. 🙂
I didn’t do that great at getting 7.5 hours of sleep every night last week, but I’m determined to keep working on it! I hit my water goals six of the days, exercised four days, ate a salad five of the days, and had dessert twice.

Peek Into Our Week: Tweaking our schedule, dental work, interviews, friendship, and my morning routine
This was a rather hot week as our air conditioner had issues and most days it was 85 to 86 degrees in our house during the heat of the day. It’s amazing how grateful this makes you for working air conditioner. 🙂
We’re still in the process of trying to get it fixed, but we’ve at least figured out where to put fans so that we’re keeping the house at around 81-82 degrees in the heat of the day — which is a big improvement.
Your comments on what temperature you keep your house at were fascinating to me… and sort of made me feel like a wimp that 81 and 82 degrees seems hot! 🙂
Here’s a little run-down of how our week went:
Monday
We started something new this week that seemed to work well. After our morning routine, instead of doing my computer work at our house, Jesse suggested I go to a coffee shop and work for a few hours while he teaches/does things with the kids and then I’d come home and swap with him (i.e. he’d leave and go work at a coffee shop and I’d stay home and teach/do things with the kids).
This seemed to work well and allow both of us to get much more focused work done and also to be much more intentional and focused on the kids during our time with them. We’re going to continue this for this coming week with some tweaks and we’ll see if it becomes a permanent thing for this season or not.
Navigating the waters of having us both working from home is new to us and it’s definitely a learning process. But we’re truly loving how it has simplified our lives and affords us much more together time.
Monday afternoon, I had a radio interview. One of the interviewers also owns Cookie Temptations. Guess what she sent to us later this week? This amazing box of goodies — including personalized cookies for our kids. Not only were the cookies adorable, they are delicious, too!
Monday evening, we had our typical Meaty Monday gathering at friends’ house. There are about 8-10 families who are part of it and whoever can come shows up each week bringing some meat for the grill and a side dish. This week, the guys had fun cheering on the USA Soccer team to victory (Silas has really gotten into the World Cup and it’s been fun to see him tracking all the scores and games. :))
Tuesday
Kaitlynn had another dentist appointment… gratefully she didn’t have to get any teeth pulled this time, but she had to get three fillings. We’ve been blessed to not have to really deal with cavities in our family up to this point, so this is new territory for us.
The dentist said he just thinks Kaitlynn is incredibly prone to cavities so we’re having all three children follow the Zellies Complete Mouth Care System (thanks to a reader for recommending it!) and are hoping that this might help out. We’ve heard great things about it, so we’ll see.
Wednesday
Wednesday morning as I was getting ready, a friend in our neighborhood texted me to tell me she was headed to get coffee and could she bring me some? I told her I was actually headed to the coffee shop to work for a few hours and asked her if she wanted to bring her laptop and hang out with me for a bit. We had such a fun morning getting some work done and getting in some great conversation, too!
I did a little non-oven freezer cooking cooking on Wednesday evening. You can see the results of my freezer cooking here and the recipes I made. My kids have been gobbling up the energy bites and they’ve made a great afternoon snack here — especially straight from the freezer!
Thursday
I walked into our bedroom on Thursday morning and my heart was so warmed to see Silas and Jesse counting out all the money for our cash envelopes together. Jesse was teaching Silas how to count money and explaining how much money we put into each cash envelopes.
Thursday evening, we got together with our neighbors — the guys hung out on our neighbor’s back porch and the gals hung out at our house. We feel so blessed to be developing such deep and authentic relationships with our neighbors here!
Friday
Friday morning, I filmed a Master Class with Michael Hyatt for Platform University on “Finding Time to Build Your Platform”. It was an honor to get this experience and I’m so grateful for how Michael has inspired me as a blogger, speaker, and leader.
Friday evening, we had what is dubbed Porch Time with our neighbors. This is where a few couples from the neighborhood all gather on the back screened-in porch of one of our neighbors to just hang out and chat. Well, that and eat the yummy food we all bring to share! It is such a blessing to have neighbors to “do life” with here and we’re so honored that they have welcomed us with open arms.
By the way, many of you have asked how we’ve developed such close relationships here already and how we have such great friends. This is an area we’ve learned a lot about and grown in a great deal the past few years. I shared some of my thoughts and the lessons I’ve learned in my posts this week on How to Find Great Friends and How to Find Time to Be a Friend.
Saturday
Today was a quiet and lazy sort of day. Jesse went out to breakfast with a friend in the morning and then he took Kaitlynn out to lunch at Cracker Barrel for her birthday. The rest of us stayed home and worked on some projects, did some cleaning, I took a long nap, and then we had a family movie night tonight.
My Morning & Evening Routines Update
I promised you all I’d give you an update on how I did on getting to bed on time last week. My goal was 11 p.m., and unfortunately, I didn’t do all that great in hitting it. But I did do better than the week before, so that’s progress, right??

Tuesday morning — 7:15 a.m.
Tuesday night — 12:30 a.m.

I’m going to track my bedtime and wake up times this coming week, as well, and am going to shoot for getting to bed by 10:30 p.m. every evening to see if I can do even better. Because I really want to break this bad habit of staying up so late!

My Favorite Ways to Get FREE Product Coupons

Do you know the BEST way to score free items?
In case you haven’t heard, free product coupons are the new way to shop! I’m talking a 100% savings on full-priced items. The only problem is that they can be hard to come by.
It’s not impossible though and I will let you in on my little secret!
The way that I have earned the majority of my free product coupons has been through playing games. That’s right: I enter and play sweepstakes and giveaways all the time. Many companies offer these free product coupons as prizes.
You may say that you don’t have a lot of time to give to enter sweepstakes everyday. After all, you’re not guaranteed to win. However, it might not take as much time as you think — and you might just be amazed how many freebie product coupons you’ll end up with!
I make time for sweepstakes every day — just like I did when I began couponing. I allot myself 30 minutes in the morning to enter as many as I possibly can before my son wakes up.
There are a few different types of sweepstakes that you can enter online:
- Single entry
- Daily entry
- Instant-win
Consistency is key.
If a giveaway is open for 30 days and allows you to enter every day, make sure to try and enter each and every day to increase your chances of winning!
Some sweepstakes require you to enter once and others allow you to enter daily until the giveaway has ended. Always make sure that you read the contest rules before you enter! Entering multiple times in a “single-entry only” game can eliminate your chances of winning completely!
My favorite sweepstake games are instant-win games. You know the feeling that you get when you save a ton of money at the register, better known as the “coupon high”? That’s the way it feels to win an instant-win game!
If you are interested in some of these games, always remember to “Like” you favorite companies on Facebook! Not only do they often offer coupons on their Facebook pages but some will host giveaways and sweepstakes! A good bit of Facebook sweepstakes are instant-win games. You can find single and daily entry sweepstake promotions on Facebook as well.
Another great way to find free product coupons is by emailing your favorite companies. I have been sent numerous free product coupons as a “thank you” for telling them how much I enjoy their product. Companies love to hear how much you love them.
Finally, always check your coupon inserts from the Sunday paper! They are not common but some companies will offer a 100% rebate on the purchase price of one of their items. Although it’s not a coupon to receive it for free at the register, it will be free once you are reimbursed for the product. Free is free, right?

How do you find time to be a friend?

Did you read Tuesday night’s post about How to Find Good Friends? If you missed it, be sure to read it and check out all the amazing comments on it. I learn so much and am so inspired by you all!
One question that people have asked me over and over again after reading that post is: How do you find time to be a friend?
The bottom line is this: I make time because it’s important.
I’m a much healthier, whole, balanced, and cheerful person when I take time to invest in friends. So I make it a priority.
Now, here’s the thing: you can run yourself ragged with social engagements and opportunities and saying “yes” to everyone and everything. That’s not what I’m advocating.
What I am encouraging is that you be intentional to develop a few good, deep, authentic relationships. These will take time and effort, but they will be so very worth it! In fact, I find that — even though I’m more of an introvert — I’m refreshed and encouraged by making friendship a priority.
We need to know that we’re not in this alone. Spending time with others who “get us” and can encourage and build us up will do wonders for our energy levels and motivation.

We need friends who will lift us up when we are down. Who will laugh with us, listen to us, pray with us, and cry with us. And it’s not only life-giving to have friends to do this for us, it’s also such a blessing to be able to do be this kind of friend for others, too!
One thing I did last year was to make a list of what I call my “inner circle” — these are people who incredibly life-giving, truth-telling, and who have gone the distance with me, people who clearly love me for exactly I am and are very committed to our friendship.
I have a lot of friends that I love to hang out with occasionally, but I only have capacity to “go deep” with small number of people. So writing down names on my Inner Circle list really helped me in being intentional in friendships and to solidify in my mind the people that I was committing to be ALL IN with.

By this, I mean people who I will drop everything for, people who I will go out of my way to spend time with, people who I try to spend time with in some way, shape, or form on a weekly basis if at all possible, people I will make every effort to make time to connect with… even if it means business stuff or laundry (or even sleep!) suffers as a result.
This might seem like it would take a lot of time and work — and it does! But here’s the thing: I’ve found that I have so much more energy and zest for life when I make time to connect with people at a deep level at least a few times per week.
This, in turn, fuels my encouragement and my productivity. Time with friends is worth the effort because it keeps me from feeling drained, tired, and discouraged! It’s kind of like a miracle drug, of sorts. On those days when I’m feeling down, calling a friend or spending an hour with a friend can give me just the boost I need to get back up and get going again.

Practical & Simple Ways to Foster Friendship
There will be times when you’ll need to drop everything in order to be there for a friend who is going through a traumatic time, but on a daily basis, maintaining great friendships doesn’t have to take hours and hours of time.
Here are some ideas of ways to foster friendship when you don’t have a lot of extra time:
Text Short Messages — I typically text at least 3-5 friends everyday to just let them know I’m thinking of them and praying for them. This doesn’t take a lot of time, but can mean a lot. Truthfully, I often do this while I’m on the treadmill or waiting in line. I figure I might as well use that time productively to bless someone else!
Invite Your Friend to Join You in Something You’re Already Doing — Headed to the park or the pool with your kids? Ask a friend or two to come join you. Your kids can get some great exercise and have fun while you have meaningful conversation.
Just a few days ago, a friend who lives in my neighborhood texted me to say she was headed to get some coffee and she wondered if she could bring me a coffee, too. I was actually headed to a nearby coffee shop to work for a few hours so I asked her if she wanted to bring her laptop and hang out and work with me. We both were about to get work done and we also got in some great conversation, too!
Write a Quick Email — I often will shoot a quick email to someone to just let them know they are on my heart or to ask how they are doing. Or, if I’ve just spent time praying for them, I’ll let them know that I just prayed for them and what I specifically prayed. This can literally take two minutes to do, but can mean a LOT.
Work on a Project Together — If you have a cleaning, organizing, or cooking project you’re working on, ask a friend to join you and help out. And then make sure to return the favor to them later. 🙂 This can make the time fly, creates fun memories, and will probably mean the project gets done more efficiently.
Talk on the Phone While Cleaning — If you and a friend both have a cleaning project to work on, call each other up and chat while you work on your projects. This doesn’t work for all types of projects, but can work well if you’re scrubbing a bathroom, picking up, sorting, or other similar projects.
Engage on Social Media — Okay, so I know that many people feel like there’s no depth on social media, but I disagree. I love to keep up with my close friends on social media — leaving comments and encouragement and letting them know I care about what goes on in their life. Plus, I’ve found that it’s a great way to be able to have a starting point for conversations when I see them in person — because I have a little peek into what has gone on in their life recently through their posts on social media.
Send a Handwritten Note — The opposite of social media, handwritten notes are almost a lost art. I encourage you to take a little time to write a handwritten note. Whether a thank you note, a birthday note, or even just a “thinking of you” note, getting mail can brighten someone’s day and let them know how much you care.
Really Listen — When you are with your friend, take time to really listen to them — even if you only have a few minutes. Looking in their eyes, asking good questions, and focusing completely on them communicates so much and can really mean the world to someone.
Ask Good Questions — In addition to listening, take time to ask questions. Real questions. Not the “how are you and how’s the weather” kind of questions. But the kind of questions that cause people to be real and honest with where they are at.
For instance, just recently, I was with a friend and I asked how they were doing. When they responded “okay”, I looked at them and said, “You’re not doing well, are you? What’s going on?” This let them know that I really cared and really wanted to know how they were and gave them permission to share a hard struggle they were going through.
Express Appreciation — You can never be too thankful. Tell people often how much you appreciate them and specific ways you appreciate them. Don’t take anyone for granted. Don’t wait to tell someone how they’ve impacted your life. You might not have the opportunity if you don’t take it today.

We’re celebrating because it’s only 81 degrees in our house today and it feels so cool compared to the 85 and 86 degrees it’s been in our house the past few days!! It’s amazing how your perspective on what’s “cool” can change.
We’re not sure what’s up with our air conditioner, but it clearly is having some issues. The repairmen can’t come out to fix it until tomorrow. In the meantime, we’re grateful for fans, ice cold water, and a semi-cloudy afternoon!

As I awaited a large tax refund earlier this year, I knew that I wanted to use the money towards our mortgage pay-off! I started to think that there has to be some way that I can apply a large sum of money towards my mortgage and make my monthly payments smaller. I entered my thoughts as a Google search and learned about a service sometimes called mortgage recasting.
Here’s what I learned about mortgage recasting:
• Most banks charge a fee (usually around $250-$500) for processing.
• You will need a minimum of $5000 to recast your mortgage.
• Your new payment will be based on your new loan amount and the remaining years left on your loan.
I emailed my loan provider immediately after learning this information. I was elated to find out that our bank and our loan qualified for this service!! Unfortunately, during my search, I also learned that not all loan providers or certain loans qualify!
The icing on the cake: this whole process was SO easy! I sent in our $5000 payment along with a $250 check for the processing fee. Our bank sent back a one page document to sign for our “loan modification.”

One Hour Freezer Cooking: Cowboy Beans, Spaghetti, & Energy Bites

Here’s a little peek into my recent One-Hour Freezer Cooking session…
I browned a massive pan of ground beef and onions. And kind of chose a pan that was too small. Whoops!

While the ground beef was browning, I put everything in the crockpot for the Slow Cooker Cowboy Beans. These were so simple and easy to make!

And the ground beef was finally done. Yikes! I made a MESS on the stove!

I had planned to make Million Dollar Spaghetti, but I was running short on time and I didn’t want to turn on the oven because the house was already so hot, so I decided to just boil the noodles, add a jar of pasta sauce to some of the ground beef, and make spaghetti for dinner.
Er, maybe I was just lazy? Well, I’m going with the fact that the house was too hot to turn on the oven. Yup, that’s my story. 🙂

While everyone was getting dinner on their plates and getting situated at the table (which always seems to take a LONG time!), I dumped everything in a bowl for the Homemade Energy Bites.

And then I quickly rolled these in balls and stuck them in the freezer. Well, after we did a little taste-testing. 😉

I walked into our bedroom this morning and the above is what I saw.
My husband was patiently explaining to Silas how much cash to put into each of our cash envelopes and then having Silas count it out. It melted my heart to see father and son working together on our family’s finances.
Truly, I am so blessed to be married to a man who is committed to not only being wise and intentional in how we spend our money, but who is also committed to passing on money management skills to our children.
Oftentimes, people will ask us when they think you should start teaching your children about good money management. My answer? It’s never too early to start. It’s amazing what children pick up from a young age.
Talk to your children about sticking with a budget. Let them see you paying with hard-earned cash. Explain why you’re waiting to purchase something until you have enough money to pay for it.
Give them opportunities to earn and spend money. It’s never too early to teach them to be wise with their money. It’s an amazing gift to give your children that will benefit them for the rest of their lives.
And also? They can pick up some great math skills in the process!
I Paid Cash… and You Can, Too!

I’m guessing that by now, you’ve read a few articles about how a family saves up to pay cash for a car. I myself always see those stories and get excited!
Maybe you get excited about the possibility of doing this yourself, but secretly think, “There’s no way I could do that. They are so much better off financially than me.”
Well, I’m here to tell you that you CAN!
You see, I’m a single stay-at-home-mom with an $18,000 per year income, and even still, I saved up $7,000 to pay cash for my new-to-me car in just one year. No loans, no financial assistance… and no welfare checks.
During the year I was saving for a car and didn’t have one to drive, a few kind people from my church sacrificially played car rotation and let me borrow theirs for a short time. It was an extremely difficult time for me, but their generosity was a huge blessing.
I was able to save for an entire year without having to pay for insurance… and after the year was up, I had a cool $7,000 to put down on a new (to me) car.
My point is simple. If I can do it, anyone can!
Don’t talk yourself out of your ability to make something happen. As the saying goes “Where’s there’s a will, there’s a way” and boy was I motivated! I didn’t have family to help me, just the kindness of a few church members and my belief that God would provide for my needs.
If you’re stuck in a place where you feel trapped, like nothing will ever change, don’t lose hope. No matter what life throws at you, you CAN make it. I stand here to inspire you, to encourage you, and to tell you that hard work goes a long way.
I believe in you… and sometimes, that’s all we really need. Just knowing someone out there truly believes in us, and I do!
You can do it! Don’t give up on your dreams of living within your means, no matter what the situation.

How do you find good friends?
Hi, I always read about your friendships and having authentic relationships. I’d love to read more about this. How you determine relationships to pursue versus those to not kindle? I always seem to end up with friends who take advantage of me and would love to have another person’s opinion -Lael
If you’ve read my book, Say Goodbye to Survival Mode, you know that I struggled with friendships for the first 28 or so years of my life. A lot of this had to do with my insecure, people-pleasing personality.
I had been hurt deeply by people close to me in the past, so I had spent years of my life too scared to open up or be authentic for fear of getting hurt again.
But finally, I was so tired of living life feeling so lonely, that I knew something needed to change. And that something was me.
I had to stop trying to please people, stop staying closed up and closed off so as to avoid getting hurt, and start reaching out, being authentic, and being 100% me.
As a result of this shift in my thinking and change in my heart, I’ve developed some incredibly deep and authentic relationships… which have been such an immense blessing to me! And I’ve also learned a lot about what great friendships are made up of.

Here are 4 components I believe are key to any strong relationship:
1. Honesty
If you want authentic relationships, you first have to be willing to be authentic yourself. You have to stop hiding behind a fake, people-pleasing persona and start being genuinely you.
Put down the plastic smiles, don’t keep people at arm’s length, and start letting people see you for exactly who you are — messes, struggles, and all. True friends don’t want you to be perfect and all put-together.
Tip: If someone doesn’t love you for who you are but instead wants you to be who they want you to be, that’s a good sign that they aren’t a true friend.
2. Commitment
True friendship requires commitment. It means that you will believe the best, you will speak the truth when it’s needed, and you won’t gossip or slander.
It means you are FOR the other person. You want them to succeed. You celebrate them. You appreciate them. You build them up when you speak to them face-to-face and when you talk about them to others.
Tip: If someone just wants to be your friend for what you can do for them — not because they love you for who you are — they aren’t a true friend.
3. Effort
A good friendship requires effort. It doesn’t just happen. It means that both parties make sacrifices for each other.
Want to have great friends? Start by being the friend to others that you wish you had yourself. It means picking up the phone, taking time to text or email, and making time to get together for coffee.
Deep relationships take time and investment. They rarely happen overnight. Instead, they are the result of much cultivation, time, and effort.
Tip: If you have reached out to someone multiple times and they are always too busy to spend time with you, that’s probably a good indication that it’s time to move on to investing in another relationship.
4. Forgiveness
Close friendships will result in misunderstandings and hurts, at times. No one is always going to do everything right all the time. And the closer you are to someone, the more possibility there is for there to be misunderstandings and hurts.
Some days, your friend might say something that frustrates or offends. Some days, your friend might not respond how you wished she would have. Some days, she’s just plain going to bother or upset you.
On those days, you have two choices: you can either choose to forgive or you can choose to be hurt and bitter.

Friendships that stand the test of time are ones where both parties choose to forgive when offenses and hurts come. It’s not easy and it means having hard conversations and sometimes saying things that are difficult to say. But good communication, working through issues, and having a heart of forgiveness will only deepen a friendship.
Tip: If someone is easily offended and constantly being hurt or upset by you, there’s a good chance they aren’t a good friend.

How to Be a Good Friend
- Take initiative — Don’t wait for others to make the first move. Ask your friend to meet for coffee, invite your friend over to hang out, text her to tell her you’re thinking of her. Reach out. Focus on blessing others and you’ll often be richly blessed in return. If you are thinking of someone, let them know you’re thinking of them. Oftentimes, just taking the time to text or email someone to let them know they are on your heart that day can mean the world to someone.
- Have a listening ear — People feel valued when you look them in the eyes and genuinely listen to what they have to share. Give them your undivided attention. Don’t think about what you’re going to say next. Just listen wholeheartedly.
- Ask good questions — Be interested in others’ lives. Learn about what they are excited about. Find out what their passions are. Ask about their goals and long-term dreams. Find out what they are struggling with. Ask how you can pray for them… and then actually follow through with praying for them! A question I sometimes will ask is just: “How can I be a better friend to you?” The answers to that one might truly surprise you.
- Find the good and praise it — Constantly be looking for ways you can celebrate someone else. Take time to express appreciation. Don’t just think it in your head; stop and verbalize it.
- Learn their love language — How does your friend feel most loved? Is it by words of affirmation, a letter, gifts, acts of service? Knowing this can help you know how to love her best.
Questions to ask yourself:
What are you looking for in friendships?
Make a list of qualities you are looking for in friendship and then think of who in your circle has some of those qualities. Start initiating things with them and see where it leads.
Who can I begin investing in?
Look around you — in your small group, church, play group, etc. — and think of a few people you already know who might be interested in a friendship. Begin investing in them. Sometimes, taking even a few tiny steps can lead to a beautiful relationship.
How can I be a better friend?
I ask myself this question often. Occasionally, I’ll even ask it to my close friends. Pour into others. Care deeply about them. Show them that they are a priority. Go out of your way to let people know how much they mean to you. Instead of spending time lamenting the fact that you don’t have better friends, focus your energy on doing all you can to be a better friend to others.
Tip: I highly recommend reading Safe People. It’s a great starting point for determining how to develop genuine friendships and how to be a genuine friend to others.
