Since our family is on a new schedule and I'm staying completely offline in the mornings so I can focus all of my energies and full attention on homeschooling and investing in/loving on my children, I'm planning on doing my baking and cooking from 1:30 to 5:30 p.m. on Tuesday and Wednesday afternoons. Pumpkin Chocolate Chip Muffins

Freezer Mashed Potatoes

i clicked on your chicken tetrazini recipe and discovered tammy’s homemade cream of chicken soup recipe! i’m so excited, as i’ve been getting hordes of cans of carnation milk for free at kroger this week and i can use that to make mostly free cream soup. unfortunately, i can never get either our fridge freezer or our full-size upright extra freezer empty enough to do once a month cooking, but i bought a book about it and i’d love to try!

I cant wait to see how you do a baking day. I have been keeping up with everything on this site daily and I LOVE it. I made the pumpkin chocolate chip recipe, but instead of muffins I put it in a pan and made it like a cake. It took longer to bake but it turned out WONDERFUL!! Thanks so much for everything you post. This blog is sooooo inspirational.
I made your Chicken Tetrazzinni with Tammy’s cream of chicken soup last time you did a freezer day and it was DELICIOUS!! I ate it for lunch for 3 days after we had it for dinner and I hate leftovers. I highly recommend it!!

The last baking day you had, you mentioned about making homemade hot pockets, but I never did see the recipe posted. Would you be able to email that to me? It would be perfect to have on hand for last minute lunches!

So inspirational! One big blitz sure saves time later. We tried the pumpkin choc chip muffins a couple weeks ago… my husband goes crazy for them! I have made 3 batches!
I totally will be tuning in to this. I would like to start once-a-month cooking myself. I would love to hear your tips on how to adapt current recipes that I may have to freezer meals as well.

I would love to know how you freeze and reheat your food. Do you do individual servings, or do you freeze in baking dishes? That’s about the only thing holding me back from preparing ahead of time and reheating.
I have the opposite issue this week. I am trying to eat from the freezer to make room for Thanksgiving stuff. So I can’t participate this time. But I was already planning to make Turkey Tetrazzini for dinner Tues. and I noticed you had a chicken one on your menu. Also, I will bake sour dough bread. And I look forward to seeing what others will make:)
I absolutely love your blog. It is a must see everyday. Thanks for posting this. I had been freezer cooking and haven’t done it in a while, I am definitely inspired to begin again. I can’t wait to read the details. Every time I read about your baking and cooking days, I get inspired. Thanks for giving the link to the freezer mashed potatoes. I make them every Thanksgiving and I was wondering the other day how far ahead I could make them. I didn’t even think about freezing. This will save me so much time! 🙂

Do you freeze your granola or just keep it in an airtight container? I love your baking days. I’ll be cooking for my freezer this weekend and reading about your this week will get me pumped up!
Crystal ~ a question for you about your waffle maker. I have purchased several decent name-brand waffle makers over the years and they all seem to have the same issue. After about 6-12 months of use, the coating area begins to chip off into the waffles and we have to throw it out. Are we doing something wrong by spraying it with cooking spray? Would you recommend your brand?
Do you think it would be possible to add a tab to the top of your page entitled “Recipes” ? You have some really great ones on your baking days! 🙂
