This chili with cornbread dinner is a family-friendly, budget-conscious meal that’s easy to prepare and packed with flavor. It’s the perfect go-to recipe for busy weeknights or simple weekend meals.

Three-Bean Chili and Cornbread
This is the perfect meal for a chilly fall evening! And anytime I can make a large pot of chili and an entire pan of cornbread that my entire family likes for less than $10 – that’s a win in my book!
The soup recipe is SO flexible. I threw in an extra half can of garbanzo beans that was sitting in my fridge and an extra cup of chicken broth to stretch it a little further.
Another easy addition would be corn. The topping possibilities are pretty much endless… think shredded cheese, corn chips, sour cream, chopped cilantro, green onions, black olives, etc.
In fact, if you’re really short on time, you could skip making the cornbread and serve this with a bag of tortilla/corn chips instead. It’s about the same price comparison. But I recommend the cornbread if you have five extra minutes to stir a few things together. 🙂

Ingredients for Dinner with Three Bean Chili Chowder and Cornbread
Three Bean Chili Ingredients
- 2 cups cooked, diced chicken (this is equivalent to 3/4-lb uncooked chicken) (Aldi — $2.49/lb) – $2
- 1 large onion (or two small) (Aldi) – $0.30
- 2 Tablespoons oil (Aldi – $2.89 for 48oz) – $0.06
- 2 cans of diced tomatoes (Aldi – $0.75 per can) – $1.50
- 1 cup chicken broth (Aldi – $1.79 for 25 bouillon cubes. I used 2 cubes and 2 cups water) – $0.14
- 3/4 cup salsa (Aldi – $1.99 for 2.5 cups) – $0.60
- 3 cans beans (Aldi – $0.77 per can) – $2.31
- Shredded cheese (Publix – $1.99 for 8oz) – $1.49
- Salt, pepper, garlic, cumin, and other spices, as desired
Total for Chili: $8.40 (serves 6)
Cornbread Ingredients
- 1 1/2 cups flour (Harris Teeter — $1.97 for 5lbs) – $0.15
- 1 1/4 cups cornmeal (Aldi – $2.85 for 15 cups) – $0.24
- 1/2 cup oil (Aldi – $2.89 for 48oz) – $0.25
- 2/3 cup sugar (Aldi – $2.86 for 4lbs) – $0.20
- 2 eggs (Aldi – $2.68 per dozen) – $0.44
- 1 3/4 cups milk (Aldi – $3.05 for 16 cups) – $0.33
- baking powder
- salt
Total for Cornbread: $1.61 (serves 8-10)
Grand Total for Dinner: $10.01 (serves 6+)
How to Make Three Bean Chili Chowder and Cornbread
1. Follow the directions here to make World’s Easiest Cornbread in a 9×13 ceramic pan.
2. While cornbread is baking, follow the directions here for cooking the Three Bean Chili recipe in a large soup pot.
(Oh, and be sure to add the extra step of blending the salsa and diced tomatoes together with a stick blender before putting them into the pot if your family is like mine and hates chunks of tomatoes and other vegetables in their chili. Haha!)
3. Shred the cheese.

- 2 eggs Aldi – $2.68 per dozen – $0.44
- 1 3/4 cups milk Aldi – $3.05 for 16 cups – $0.33
- 1 Tablespoon baking powder
- 1/2 teaspoon salt
Instructions
Three-Bean Chili Chowder:
- Cook onion in oil until tender.
- Add remaining ingredients and bring to a boil.
- Reduce heat and let simmer for 30 minutes to an hour.
- If desired: garnish with shredded cheese, green onions and sour cream.
Easy Cornbread:
- Preheat oven to 375º F.
- In a medium bowl, mix all the ingredients together (I use a whisk).
- Pour into a greased 9×13 pan.
- Bake in preheated oven for 25 minutes.
- Enjoy immediately with butter and honey, syrup, or jam.

From Self-Doubt to Six Figures: Jenna Quentin’s Work-at-Home Success Story
I love celebrating women entrepreneurs who’ve turned their passions into purpose-driven businesses. Recently, we had the chance to interview Jenna Quentin who’s the heart and soul behind Adjust Your Media, Inc.

Jenna’s journey from battling self-doubt to running a six-figure marketing company is full of encouragement and practical wisdom. As we talked, she opened up about her calling, the sacrifices she’s made, and the daily rhythms that keep her grounded.
I’m so excited to share her story with you, because I know many of you will see yourselves in her path and feel inspired to keep pressing forward with your own dreams.

Meet Jenna Quentin
Jenna Quentin is the heart behind Adjust Your Media, Inc., a marketing agency that serves chiropractors across the U.S. and beyond. But her business is about so much more than marketing. It’s about empowering families to live healthier, more natural lives.
“I work with chiropractors to create content and manage their digital marketing with done-for-you services and a DIY coaching program,” Jenna says. “But really, I work for the families those chiropractors serve — so more people know their bodies were powerfully designed to heal and that there are natural options available.”
She’s taken a love for writing and used it as a tool to serve others and, in doing so, built a thriving business that fits into her life as a wife and mom.
A Calling That Started with a Simple Gift
Jenna’s journey began years ago, thanks to a small but powerful act of encouragement. As a teenager, a family friend handed her a book about writing and told her, “You’re a writer.” In that book, Jenna read a line that stuck with her: “When God gives me His stories, it’s my responsibility to share them and help others do the same.”
From that moment on, Jenna saw writing not just as a skill, but as a calling. She found creative ways to share stories through blogs, newspapers, and freelance projects. It wasn’t always clear where the road would lead, but her willingness to write wherever she could laid the groundwork for what would eventually become her business.

Narrowing Her Niche as a Woman Entrepreneur
In April 2019, another friend gave her a life-changing gift, this time in the form of encouragement and confidence. One evening, over pepperoni pizza, Jenna lamented to her close friend Denise how frustrating it was to keep knocking on closed doors in her writing. Mom blogs, magazines, newspapers, and businesses all barely paid enough to make her efforts worthwhile.
Denise and her husband were also Jenna’s family chiropractors, and Jenna had been writing blog posts for their website for a couple years.
“You should just write for chiropractors,” Denise said. She listed how much knowledge Jenna already had in the field, including personal experiences of transformation in her family. “We’re going to tell our friends you’re open to new clients,” Denise reassured Jenna.
Within a month, Jenna had five chiropractors as blogging clients. It was the clearest open door Jenna had ever experienced! By August 2019, she knew she needed to set up an LLC and a bank account and to treat it like a business. Denise suggested the name Adjust Your Media.
Persevering Amidst Heartache
Everything was falling into place until February 2020, Denise was diagnosed with Stage 4 colon cancer. It was so shocking that Jenna wondered if she could carry on writing about natural health. Did it matter if even a vibrant, healthy woman in her early 40s could get so sick?
Then in April of 2020, Jenna put out a freebie to help chiropractors write an email addressing Covid-19 concerns and had over 100 people join her email list within hours. Jenna took it as confirmation to continue serving chiropractors and the world with information about natural healthcare options that do not guarantee long life or promise a “cure” but do improve quality of life in a toxic, stressful, broken world.
Denise battled cancer for nearly five years and went home to her Savior September 2024. She continued to be Jenna’s biggest cheerleader, sharing lessons in health, faith, love, life, business, and death. Now it feels to Jenna that she can have a small part in carrying on Denise’s life work by passing these on to others.
Battling Self-Doubt
Like many moms pursuing something new, Jenna wrestled with self-doubt. Despite her passion, she often questioned whether she was “qualified” enough to run a business.
“There were days I felt uneducated,” she admits. “But instead of giving up, I took one small step at a time… even when it was uncomfortable.”
Jenna’s story reminds us that confidence doesn’t always come first. Sometimes, the courage to keep moving forward is what builds the confidence we need.
The Power of Real Connection
Jenna’s business breakthrough came not from knowing everything, but from learning the value of authentic connection. In 2021, she started going to chiropractic conferences a few times a year with the goal of meeting people face-to-face, listening to their needs, and showing them she was the same person offline as online.
It wasn’t easy. These trips required financial investment, time away from home, and childcare coordination. But those sacrifices paid off. By her second year in business, Jenna was able to retire her husband from his second job. In 2024, her company celebrated its first six-figure year.

A Day in Jenna’s Life as a Successful Woman Entrepreneur
Jenna’s days are full, but they’re also intentional. She wakes up at 6 a.m. to join a breath-work call that helps center her before the day begins. Then it’s off to the races: getting kids and pets ready, school drop-offs, and heading into her home office from 8 am to 4 pm.
During that time, she manages an impressive workload, including:
- Writing newsletters for over 100 chiropractic offices
- Reviewing content from her team
- Hosting her podcast, What Chiropractic Doesn’t Cure
- Creating social and email content for chiropractic associations
And she even sets a daily lunchtime alarm to remind herself to step outside and breathe, which is a small but powerful reset in her busy day.
Balancing Work and Family
Even with a packed schedule, family remains Jenna’s top priority. Once the workday ends, she or her husband picks up the kids. He often takes the lead on dinner prep so Jenna can finish up tasks, but evenings are for family: shared meals, neighborhood walks, or snuggles on the couch.
By 8 p.m., it’s bedtime for the kids. Jenna and her husband wind down with quiet time on their balcony, a daily ritual that keeps them connected. Her goal is to be asleep by 11 p.m., ready to do it all again the next day.
Tools That Help Her Grow
In the middle of work, family, and faith, Jenna stays committed to personal growth. Her secret? Tools that work with her lifestyle. She listens to audiobooks through Audible and the Libby app, allowing her to continue learning during commutes, chores, or early mornings.
These small investments in learning have helped her lead and grow without sacrificing the life she values most.

Jenna’s Advice for Moms
Jenna’s encouragement to other moms is simple but profound:
“Start with your WHY. Knowing your purpose will guide you and give you strength when things get hard.”
She knows what it’s like to doubt yourself. Last year, she wasn’t sure she could make payroll. This year, she’s hiring team members.
Faith has been Jenna’s anchor through the ups and downs. And when doubt creeps in or opinions start to weigh her down, she reminds herself: her calling, her faith, and her purpose are stronger than fear.
