Well, I didn’t get all of the freezer cooking done last week because I was in the middle of finishing up my manuscript. I just had to hunker down and get the edits done. I did — and it feels so good to have it turned into my publisher!
And now I can get back to more normal life again. 🙂

You will love the energy bites, I think! I have made that recipe about 4 times since she posted it, and we love it. (Even my hubby who’s sometimes picky about stuff like that.) Hope you like them as much as we do!

We’re eating all vegetarian meals Monday-Thursday so we have Indian bean soup with homemade chapatis, kale salad, corn soup, pasta with snap peas, kale and coconut with brown rice, boiled eggs & hummus for snacks!
I would love to know what kind of fruit you serve? Is it canned or fresh? I tend to serve veggies at dinner but my kids aren’ t big veggie eaters. Imagine that! I think fruit will be better since they love fruit.
Frozen fruit (allow it to thaw a little bit) is great to serve with dinner too. We buy a big bag that has mango, pineapple, strawberries, and peaches. I use it to round out dinner and the kids love it. Sometimes I’ll make a little “dressing” of cream cheese with a little bit of sugar and milk to pour on top of the fruit.
That sounds so good Stephanie. I will add that to my menu this week. I know my kids will love it. 🙂

I don’t usually do the menu planning thing until I go shopping. I find I save a lot of money by eating what I buy rather than buying to eat. I also find it varies our menus a good deal, as well as adding a good bit of fresh foods to our diet. That said, I can tell you that we’re doing the following this week:
Dinners –
*tuna casserole
*vegetarian alfredo
*chicken and biscuits
*steaks and roasted veggies (potatoes, onions, peppers and mushrooms)
*baked salmon, rice and salad
Lunches –
*subs – cold cuts, veggies
*scrambled egg sandwiches
*soup
*leftovers
*grilled cheese
(We always have fruit, granola, yogurt, etc. on hand to round out lunches)
Breakfasts –
*granola and yogurt ” parfaits”
*cinnamon toast
*applesauce muffins
*some sort of breakfast cake
*leftover cake or muffins
Have you tried the crockpot refried beans recipe before? We’ve tried several, and none of them so far has had enough flavor. Just curious what you think about this one.

I add an onion, couple of cloves of garlic and oregano to my crockpot beans and a ham hock or ham ends. Unequalled for flavor.
