I’m f-i-n-a-l-l-y getting around to telling you about my very successful one-hour freezer cooking session that I did recently.

So this Peppermint Skinny Chocolate was a winner. I was kind of hesitant about how it would turn out, but I followed the recipe exactly — including the tips the blog suggested — and it was delicious. In fact, it was so good that I was tempted to literally lick the bowl out. Instead, I scraped it clean (see above).

I cut it in small pieces and stored it in the freezer and it’s the perfect treat on a hot day!

Next up, I made a batch of Homemade Energy Bites. These are the snack of choice for my kids this summer. And I love it that they are packed with pretty healthy ingredients.

One batch lasts the three kids about a week. But I can’t always keep up with the demand, so Kathrynne asked me if she could learn how to make them, too. See pictures of how her batch turned out here. :)

And while I was busy making Skinny Chocolate and Energy Bites, the guys were whipping up a batch of Whole-Wheat Pancakes.

I love baking and cooking together in the kitchen as a family. And now that we’ve overhauled our lifestyle with the move to TN, it’s becoming a fairly regular occurrence around here — which is so much fun!

Here’s a little peek into my recent One-Hour Freezer Cooking session

I browned a massive pan of ground beef and onions. And kind of chose a pan that was too small. Whoops!

While the ground beef was browning, I put everything in the crockpot for the Slow Cooker Cowboy Beans. These were so simple and easy to make!

And the ground beef was finally done. Yikes! I made a MESS on the stove!

I had planned to make Million Dollar Spaghetti, but I was running short on time and I didn’t want to turn on the oven because the house was already so hot, so I decided to just boil the noodles, add a jar of pasta sauce to some of the ground beef, and make spaghetti for dinner.

Er, maybe I was just lazy? Well, I’m going with the fact that the house was too hot to turn on the oven. Yup, that’s my story. :)

While everyone was getting dinner on their plates and getting situated at the table (which always seems to take a LONG time!), I dumped everything in a bowl for the Homemade Energy Bites.

And then I quickly rolled these in balls and stuck them in the freezer. Well, after we did a little taste-testing. ;)

One-Hour Freezer Cooking: Pizza Pockets, Pepperoni Pizza, and Flaky Biscuits

I did a One-Hour Freezer Cooking session today while Jesse was making dinner. It was so fun for the two of us to be working in the kitchen together!

I ground some whole-wheat flour first since I was running low on flour.

And had a little spill with the flour mill… whoops!

After grinding up some flour, I made a batch of Freezer-Friendly Pizza Dough.

I used half of the Freezer-Friendly Pizza Dough to make Pizza Pockets.

I basically just put a little pizza sauce (leftover from something I made last week) and some pepperoni and shredded cheese (also leftover from another recipe — I’d stuck the extras in the freezer last week) and then folded them up and baked them.

I used the rest of the dough, pepperoni, pizza sauce, and shredded cheese to make a pepperoni pizza.

Finally, I made a batch of Flaky Biscuits. I had found this recipe earlier and wanted to try it since it seemed so simple.

It was SO easy — and I was really happy with the end results. For all whole-wheat biscuits made with coconut oil, these were delicious. {I used regular milk instead of Silk since that’s what I had on hand.}

While I was cooking on one side of the kitchen, Jesse was working on the other side making a new recipe he found for Bell Pepper Nachos.

I was very impressed with how this recipe turned out. They were flavorful, easy to put together, and very nutritious.

Most of all, it was just fun to hang out in the kitchen with my husband — and to also have his help with clean-up (my least favorite part of cooking!) I feel so blessed that our new lifestyle here in TN is giving us opportunities to slow down and just live everyday life together like this!
