I’m not great at menu planning but I’m experimenting with “budget” meals. I made pan fried cube steak last night – it’s a very inexpensive cut of meat and one that I had often growing up. I’ve never made it myself but I found a recipe on the Pioneer Woman’s blog. Luckily my guy loved it! I served it with some cheesy au gratin potatoes and he was happy. Considering he basically wants meat, meat and then more meat for dinner I am always looking for recipes for inexpensive cuts.

After a crazy few months it feels good to be back in the kitchen and doing more cooking. Yesterday we made Chicken Lettuce Wraps that were amazing and tonight are trying Fajita Bowls with homemade salsa. Yum!
