We're having another Baking Day today and tomorrow! Our freezer is almost cleaned out of everything we made last Baking Day and we're definitely needing to restock but I'm going to be gone this afternoon and tomorrow afternoon, so I decided the split up the Baking Day projects over two days.
Here's what I'm hoping to get made:
Healthy Harvest Muffins
Cranberry Wheat Muffins
Pumpkin Apple Breakfast Bread
Cranberry Pumpkin Scones
Banana Apple Carrot Muffins
Whole-wheat waffles
Apple pie
Cook up rice and freeze
I'll put up a post tomorrow afternoon or evening with pictures of what we accomplished. We don’t shop till Thursday, and we’re out of most of the basics of baking, like eggs, so baking day won’t be till Friday this week for us, but I’ll play along anyway. Here’s my list.

Refrigerator Bread
And to the poster who didn’t know why you would want to freeze cooked rice, I am guessing you use instant rice, is that right? Because regular long grain white rice takes a good half hour to cook and can stick or scorch if you don’t watch it closely, it helps to make a bunch all at once when you aren’t trying to juggle it with making the rest of a meal, and then you can have dinner ready in a snap without spending 5 times as much money for the convenience of the instant stuff. Or at least that’s my take on it.

I freeze my brown rice all the time. I use it in a yummy chicken and rice soup. I always cook it so that it is ready to eat, because, as you know, rice in soup swells and can get too starchy. This way I can throw a cup or two of rice into the broth about 30 minutes before serving, and it comes out just right. HTH

I’d love to, but I do mine on the weekend since I work full time. And Wednesday’s are our busiest days since we are at church from 5:30 until 8:30. I do plan on baking this weekend. Pumpkin Nut Muffins, Chocolate Chip Zucchini Bread and Crustless Sweet Potato Pie. I’ll also be cooking, dividing,and freezer packing ground beef and chicken.
I went and made the Cranberry Wheat muffins right away (I had 3 cups of Cranberries in the freezer I didn’t know what to do with) I doubled the batch and it made 24 medium muffins and 24 mini muffins! There were good, but a little sour for our tastes. I might add a little more sugar in the future! Otherwise – thanks for the recipe!
Also interested in knowing more about freezing rice! I use organic, long grain brown rice and usually just cook enough for the week ahead (and then refrigerate) when I do my weekend meal prep.

I just made the pumpkin apple bread today too. (Thanks to your post from yesterday.) I threw in some wheat bran in place of some of the flour to boost the fiber even more. Delicious!
May I chime in on wanting a tutorial on freezing rice too? Glad I’m not the only one that doesn’t know about it. Not that I have room in my freezer at this point, but it would be great to know for pre-made fast meal options in the future.
We did some baking today, too. I highly recommend this recipe…not the healthiest muffins out there but they are delicious.

I noticed on your last baking day that you make your beans on the stove. I thought I would point out (although I suspect you already know) that you can also make them in the crockpot. They do need soaking overnight that way, though.
I would like to try this baking day and freezing the stuff. What is the best way to do this? Bake them, cool them, freeze them individually? How do I thaw them? Just leave them on the counter? Sorry I have so many questions, but I’m bad at the freezing of stuff. Thanks!

I’d love to hear how you freeze and re-heat the rice, as well as the scones. Maybe it’s a newbie thing but I didn’t realize you could freeze those either. I’ve been finding lots of yummy scone recipes and have guests next week that I’d like to share them with. Thanks for the inspiration and help!!

I have always just cooked the rice, cooled, and stuck it in the freezer. I never really thought about it before. Anyway, I am not sure if there is a secret to it, but the rice always tastes fine to our family!
Wish I could join you, but with working full time, I just do simple quick dinners and no baking on weekdays. My baking days are weekends! Last weekend, I made:
*sourdough bread- I keep a starter going. I started it with my breastmilk, using a recipe from the book The Breastfeeding Cafe!
*apple bread
*m’n’m brownies
Call me silly but…why do you need to cook and freeze rice ahead of time?
Last week, I made tons on pancakes and muffins and froze them.This week I plan to make:
1. Sweet potato muffins
2. Corn Bread Mix
3. Banana Apple Carrot muffins (thanks ladies for the recipe)
4. Some sort of granola bars/vegetarian pemmican bars/oatmeals squares (Sarah Snow was on John & Kate + 8 making oatmeal bars-recipe is online)
This is a good idea! I should really do this sometime. I have just begun learning how great a freezer is! I have been wanting to make some more english muffins.. maybe this will be my motivation!

Oh, good! I am not the only one thinking that! I have four boys and my husband and I do a baking day and I have to hide it in the freezer to get things to last a couple days! I baked 2 large loaves and 3 mini loaves of whole wheat pumpkin bread yesterday and all the mini loaves were gone as soon as I took them out almost and part of one of the large ones as a snack after dinner.
I do bake cookies and hide them in a variety of containers in the freezer so that I can have some later!

A tutorial on how to freeze rice would be great! Do you cook it all the way until done or do you under cook it? I have so much rice, I would love to get it out of the pantry and into the freezer. I never thought to freeze rice!
We did a bunch of baking yesterday: French Bread, Whole Wheat Bread and buns, and cookie bars. We’re still finishing pumpkin muffins from a homeschool project a few days earlier. 🙂 Baking at home means we know what’s in it, and it’s fresh!

I didn’t realize that you could cook up rice before hand and freeze it. I figured that you the rice would be hard when defrosted. Do you have to cook the rice for less amount of time beforehand since you are freezing it? Any extra suggestions or tips on freezing rice? Thanks.

I just froze bananas last night – that’s my ice cream! A frozen banana with chocolate sauce. Uses up ripe bananas AND a tasty and healthy treat! I hope to make your banana peanut butter smoothie someday too, that sounds fantastic! Can’t wait for the results of the baking day!

I don’t know a lot about what you can freeze and successfully reheat…I didn’t know you could freeze rice and expect it to be good! I would appreciate any info you could share on the topic as my family eats a ton of organic brown basamati.

Yea! I look forward to the rice post. I know this will probably be the simplest thing but growing up my mom made hambuger helper 3 nights a week and it is hard to break those habits when you really don’t even know the basics of cooking. Thanks for all your help with these baking day posts!
