Well, this week’s Freezer Cooking in an Hour session wasn’t as successful as I was hoping for.
I started out by throwing everything in the crockpot for the World’s Easiest Crockpot Refried Beans. This truly is the easiest recipe ever.
Then, I whipped up the Healthy Choco-Cherry Oatmeal Cookies. I was really happy with how these turned out. They are packed with wholesome goodness and are yummy, too.
I was disappointed in the Breakfast Cookies. I really wanted to love them, but they just didn’t compare to the other Breakfast Cookies I made recently.
And 45 minutes later, I had a big ‘ole mess to clean up. 🙂

I made the crockpot refried beans last week with black beans, as they are my favorite, and they turned out awesome!

My family loves Mexican (husband from TX)! And though the supermarkets here stock Mission and Old El Paso ingredients, they are really expensive. A can of refried beans is over $4. So I was excited about the crock pot refried beans — I use my crock pot with a power transformer.
We don’t have pinto beans so I used kidney beans. I soaked them overnight, only added 7.5 cups of water, and pureed with my immersion blender (that transformer again) and they are great! Will also be making the freezer burritos and DIY taco seasoning. Thanks!

I LOVE the Crockpot Refried Beans! They freeze great, and make yummy bean and cheese burritos for on the go.
I recently purchased some breakfast cookies really cheap at our local closeout store, I was able to get a case of 48 cookies for $4 and they are huge. But I don’t see them on sale very often so I am on a search for a good breakfast cookie to make myself. I’m sorry to hear the one you tried didn’t turn out as good as you had hoped.
I tried the crockpot refried beans last week, and they are so, so good! Thanks for sharing that recipe! It made enough for my husband and I to have bean and cheese burritos for lunches, plus plenty to go in the freezer for future meals. Next time, I’m going to try using the same recipe with dried black beans, for a change of pace. We’ll see how those turn out!
