As I told you in yesterday’s Kroger markdowns post, because I’m changing my morning routine, it means I have time to run by the store and shop for markdowns or great deals again in the mornings — which I have really missed having the margin to do.
So expect to be seeing a lot more posts about my shopping trips. Here’s what I got today (I just popped into Kroger on my home from school drop-offs):
Today’s Kroger Shopping Trip
- 3 cartons of cottage cheese — marked down to $0.99 per carton
- 1 yogurt whips — marked down $0.29
- 3 bags (with 7 avocados each!) — marked down to just $0.99 each!!!!
Total with tax: $6.62
I froze the cottage cheese and we’ll use it in Berry Cottage Whip or smoothies.
I’m on the fence as to what to do with the avocados. As you may recall, I found a similar deal on avocados last year and we ended up freezing them! Truth be told, we didn’t love them that way.
So, this time around, I’m thinking that we’ll eat as many as we can in the next few days and make a big ole batch of guacamole, too!
Any other ideas for what we should do with the avocados? I’d love your suggestions!
Fresh Guacamole (had some made in Mexico and it was the best) and you can freeze the avocado slices for future meals and smoothies.

This is the best lunch meal and it is a freezer meal and uses avocados.
Wow! Now I want an avocado! I never knew there were so many ways to use them or that guac will freeze!

I also take a piece of deli meat and roll up a piece of cheese and an avocado slice in it
I store my avocados in the fridge until I need them, then pull one out at a time to make a smoothie: 1 avocado, 1 cup milk, 1/4 cup orange juice, 1/2 cup vanilla Greek yogurt, 1/2 cup frozen blueberries, and 1/2 cup frozen strawberries. We either drink it as a smoothie or pour it into popsicle molds. They taste amazing and my kids love them!

I was going to say have an impromptu Mexican night with friends. Make a huge batch of guacamole and do a taco station (or something similar). That goes along with your hospitality goals this year!
I love that idea! We have a Taco Night with friends on the calendar next Saturday, but they won’t likely last that long. However, we’re hosting our Community Group (5 families) for a cookout tomorrow night, so I think I’ll make some guac and chips for that!
We really enjoy avocado on our sandwiches (especially BLTs), burgers, salads, wraps, and even toast! We also LOVE guacamole, especially my 7-year-old son, so we eat a lot of that too! Pinterest is loaded with great recipes – I found one for adding avocados to egg salad – YUM! – and one for fried avocado fries!

I make guacamole and freeze in individual servings. I have never had a problem with it tasting bad. When I want some I just let it sit out for a few hours (such as in my lunch bag) and it is thawed enough to eat.
Maybe gift some to friends, or neighbors?

I would freeze them or add them into my shakes. I’ve also used them on my sandwiches as a substitute for mayo. 🙂
I love them in smoothies! Also for a quick and easy lunch, make chicken salad, using only chicken and veggies, instead of the mayo replace with avocado! So good!

I think that 1/2 of a frozen avocado in a smoothie makes them so creamy and filling. I have a Vitamix, so it can handle them frozen. Almost gives the smoothie an ice cream consistency. No need to add lemon or anything, just freeze in halves or quarters in ziplocks and drop in smoothie. Learned this from Green Smoothie Girl.
I have an avocado cookbook. There’s even a soup. Happy to scan a few to you if you’ve had enough gauc or toast or whatever! 🙂
Make a recipe and freeze AFTER making. I’ve seen recipes for brownies, cake, etc. using avocados as a healthy fat instead of other shortenings. Guacamole always freezes well for us after it is made. We add a thin layer of lemon juice, salsa, or sour cream on top to seal out the air and prevent browning – even if storing in the refrigerator for shorter term use.
Make guacamole and THEN freeze it. I have had success when I put it in sandwich baggies, squeeze out all the air, and get them in the freezer quickly to stop the oxidation. Also make sure you have plenty of lemon or lime juice in the guacamole to keep it from browning.

Have you tried a chocolate avocado, banana smoothie? There are several recipes, but I love it that way. You could freeze like smoothie packets. But guacomole is always a good option too!

Well, there is so much you can do with avocados. We like an avocado salsa. One avocado chopped, one small roasted or fresh pepper chopped, one chopped roma tomato, one can black beans rinsed and drained, one cup corn defrosted, three green onions sliced, 1/4 cup minced cilantro if you like cilantro, one jalapeno finely minced or less or optional depending on heat for your family, one or two limes squeezed for juice, olive oil, salt and pepper to taste, . Mix avocado, chopped red pepper of choice, roma tomato, black beans, corn, green onions, and cilantro in a large bowl, and set aside. In a medium bowl, mix together the lime juice, jalapeno, salt and pepper and then whisk in the olive until the taste desired. Pour over the salad and let marinate in the refrigerator for about an hour. If not serving the same day, wait to add the cilantro. Great avocado deal. Just wait till there ripe and then you can peal and deseed them. Next, put them in a large bowl and squash them into an avocado guacamole. Mix in some lime or lemon, salt n pepper and cilantro and put the mix into smaller freezer bags. Then freeze and use them as needed. The mix wont turn black or spoil and it will unfreeze perfectly. Enjoy!
I would add them to your favorite smoothie. You could freeze it and thaw and drink later.
Like Amy said with the egg cooked in it, on toast, mix with hard boiled eggs instead of mayo, use as a bowl for taco salad, in your smoothie, as guac,in salads ok now I want an avocado,lol. Enjoy!
Half and pit avocados, crack an egg in the empty spot, bake and then sprinkle bacon on top.
I learned a trick that allows you to keep avocados much longer than you would imagine. Put the unripe avocados in the refrigerator and only get out what you will use in the next day or two. Once they ripen, replace with more of the ones in the refrigerator. You can continue this for 3 or 4 weeks! It works!
Homemade pizza(sometimes I use Naan bread)with pesto, avocado, tomatoes, and yellow peppers is one of my favorite ways to use it up!
Grandma always served them at every meal. She would cut in half, and put sliced scallions and cut tomatoes in the center and cover with Italian dressing. Still my favorite way.
We like to make Cowboy Caviar. Black beans, tomato, green onion, avacado, cilantro, lemon juice, salt, pepper, garlic powder. Eat as a salsa, or a meal! Other variations of the recipe online!

we made this recipe that came on the bag of avocados from costco recently and it was a hit:
in a graham cracker crust –
1pkg. cream cheese
1 can sweetened condensed milk
1 large avocado
2.5 Tbsp. lime juice
1.5 Tbsp. lemon juice
pinch of salt
– blend filling ingredients together, put in pie crust, chill for 4hrs. garnish with whipped cream, blueberries and sliced almonds. (we only did the whipped cream)

also, we make as a smoothie – 1 can coconut milk, 2 frozen bananas, 1 large avocado and a splash of vanilla. Nature’s Value brand of coconut milk has no additives in it. I think freezing for smoothies is a good idea!

Put half of one in smoothies and it makes them thick like milkshakes! Sliced and fried with eggs, on toast, a little salt makes them so yummy!

I second the pudding! I usually put 6 in the food processor along with two heaping tablespoons baking cocoa, a splash of almond milk, and honey to taste. I just had some for lunch!

What I always do is put them in the fridge. They will last for at least a month, but a lot of times two if they go in still relatively hard. I’ve found they stay super fresh that way and taste even better than when left our on the counter!

I think the key to that working is making sure they get in the fridge while they’re still on the firm side. Eating them all really fast is always a great option as well! =)
I always buy in bulk when they’re on sale and put them all in the fridge while still quite firm. Then I take two out at a time to ripen on the counter. They’ll keep in fridge for about 3 weeks!
Chocolate peanut butter avocado pudding! The best! I don’t bother with the topping, but that would be great as well.

I wrapped avocado slices in turkey bacon and bake them in the oven. You can find them on Pinterest as avocado french fries. They are our new favorite.

Ooh–also chocolate pudding! Blend the flesh with cocoa powder, sweetener of your choice, a dash of vanilla/chili/cinnamon… Make it really smooth. It sounds weird but it’s delicious and not weird-tasting at all.

Totally 2nd this!!! I use avocado, 1/4 cup 100% cacao, 1/2 cup almond milk, 1-2 Tbls pure maple syrup and 1 tsp almond, vanilla or mint extract 🙂 so yummy!!!
That’s what I do, avocado chocolate pudding, although my recipe doesn’t call for any milk. But I figured out that I can freeze it into popsicles and it tastes just like a fudgesicle!

I love avocado toast. Slice them on toast with an egg (or cheese), or smash them with a bit of salt/lemon/garlic powder first.
They are also really nice halved and splashed with a little soy sauce/tamari. Cut into cubes in the peel (you know, so you can scoop it out easier?), dash with soy sauce, and eat with a spoon. I read this on NourishingGourmet.com years ago and have loved it ever since!
