I like to make waffles on weekends and freeze the leftovers for a quick breakfast during the week. I just pop it in the toaster to warn it up. I use the basic waffle recipe in The Joy of Cooking. I add ground flaxseed and wheat germ, and I reduce the flour by the same amount.

We do frozen waffles every winter. I’m not a morning cook, so do big batches of waffles ANY other time, and freeze them. My son takes them out, pops them in the toaster, and we’re good. We do a few different variations, any of which are better than commercial.
