I think egg prices will go much higher soon. I would buy what you can refrigerate. I’m also thinking about freezing some (shelled).

I am just now seeing your comment. What a great idea! And after grocery shopping yesterday, where egg prices went up yet again, you are absolutely right. I’m going to look into freezing them. Either that or we’re going to have to stop eating eggs at the current inflation rate, haha!

You comment about egg prices is interesting to me, as I keep chickens. They cost at least that much when you have your own hens, mine cost even more because I feed organic. The only reason egg prices are usually low is because we subsidize so much of what goes into commercial hen operations. Because of the living conditions a serious virus has broken out and millions of hens were killed and are continuing to be killed. (Almost 3 million hens at one facility at one time were killed last month, almost 7 million total now.) When there is that kind of loss of hens, there will a lot fewer eggs, bringing the price up.

I am just now seeing your comment. Thank you for helping me understand the situation better! Egg prices went up AGAIN this week – I have SO much sticker shock in the grocery store right now. Your organic eggs and chickens sound absolutely amazing!
