        Oh, good! I think I “accidentally” have begun eating more gluten-free. A friend from church is on a GF diet and mentioned the same thing a while back. We do eat gluten, but it has become limited. I am hoping to begin making things with more nut flours and such, too. Saving up for a Vita-mix, too. Heard those were good for grinding flours.

    I love the new freezer cooking series. Thank you so much…very appropriate for right now. I’m switching the breakfast and dinner weeks though…I had already planned to freeze dinners this week, but for dinner week I will do breakfasts :)
    Here is our menu for the week…despite the non-subsiding cankles and sore feet that will be here until baby #2 arrives in 3 weeks, I managed to freeze three different meals. Yay!

    This week I am making salmon patties which I have not made for a while so they sounded really good. We are also having some herb rubbed steak one night and chicken fajitas another night.

    One of my goals this week is to have dinner at home every night – we’ve been eating out too much.

    On the dinner menu this week: boxed chicken bake (we were running late for dinner, hubby’s request!), chicken pasta spinach bake, tacos, chicken pot pie, cowboy spaghetti.

    On Pinterest I saw pb&j sushi rolls so I put it on my menu this week to make for my son. They were fun to make. I only made them for him since they took a little longer to make then just a pb&j sandwich but I think they would be perfect for a birthday party.

    Breakfasts: Eggs: in tortilla with salsa & cheese; scrambled with chives from our garden over small baked potato; in toasted sandwich thin with bacon bits & shredded cheese. Cereal with fresh strawberries. English muffin with Peanut butter and black cherry jam.

    Lunches: leftovers, lunch out, lunch with family

    Dinners: Harvest beef stew (using canned fruit) served with Naan bread
