Amanda at Full Plate Living has a great post up on how to make A Week of Weight-Loss Friendly Dinners for Under $35. Here’s a snippet:
Maybe $35 isn’t an impressive price point for you. That averages out to $5 per dinner for two people. However, some of these recipes would serve 4 at my house. And I can pretty much guarantee there would be leftovers.
Perhaps $35 sounded good to begin with, and I just made it sound even better. You’re welcome.
Either way, you have a week of high-fiber dinner recipes just ahead.

I was excited about this post until I realized the recipes are loaded with carbs. I have a Gluten intolerance plus Type 2 Diabetes so I have to follow a low/no carb diet. I’m sure it will work for others, though.

All beans – no meat. No way could I get my carnivore family to eat that many beans. They won’t do it. I would eat it and enjoy it, but my coworkers would be offended. Spaghetti sauce snob husband wouldn’t touch the pasta dish because it is not his favorite name brand and there are beans in it. No amount of “Doctoring” is effective ~ I’ve tried. He knows the difference even if I hide the container. He’s bullheaded that way and would eat dry pasta first. I just keep on hitting the sales and we rarely eat out so guess we all just save where it works for us. Imagine my horror when we first were married and he told me he didn’t eat leftovers. I won that “discussion.” WE mostly use them for work lunches or I freeze the extra for another day. It will be 32 years the end of the month. 🙂
