I second Justi’s comment. I have tried several of Laura’s recipes and they instantly became favorite recipes in my regular menu rotation. I’ve been following her Real Food/Real Budget series and it already looks very promising — I highly recommend it 🙂
While planning my menu for the week I purchase a family size package of meat and figure out how many meals I can get from that 1 package. For example I purchas a package of boneless pork loins from Costco there are 9 in a package, because they are extremely thick I cut them in half. I now have 18 pork loins to choose from. I can usually get 3 to 4 meals from this single package alone for our family of 6.
My husband and I do the same thing w/ chicken from BJs – you can get 7lbs of Perdue for about $20 (or less if you have the rare coupon) and I make meals for a week to two weeks out of that. So much cheaper than buying meats a few pcs at a time at Kroger.
I purchase a family size meat package and plan out how many meals I can get from that package when I make my menu for two weeks.

We LOVE Laura’s recipes around here! We just had her Easy Breakfast Casserole a few days ago, and my boys are eating her Pumpkin Chocolate Chip Muffins (adapted from here) right now.
My question is…how much *time* does it cost?
Not much, Laura at Heavenly Homemakers is very reasonable with the amount of time a wife and mom has to spend in the kitchen. I use many of her recipes and none of them take long and they are usually big hits with my husband and three littles
I should have clarified…it’s not just the amount of time it takes to prepare food I’m concerned about. I’m concerned about the time it takes to procure the ingredients for such a small monetary cost (and its nutritional value). If it involves hours of looking at sales fliers or grocery websites, printing and clipping coupons…that’s not something I’m all that willing to do right now.
But I will follow along and see what happens.
