I did a mini-Freezer Cooking session last week and here’s what I ended up getting accomplished:
A triple batch of Whole-Wheat Chocolate Chip Pancakes
Three meal’s worth of Marinated Chicken
Two big bags of chicken cooked and chopped/sliced
One loaf Whole-Wheat Bread
Next week, I’m planning to tackle making a big batch of Homemade Baking Mix and plan to also make meatballs and meatloaf. I’ll share the Baking Mix recipe once we’ve tried it.

Can’t wait to see how your baking mix turns out! I was coming to check and see if you had posted the recipe. I would love to find a homemade version since Bisquick can be very pricey. I love to use it to bread meat for pan frying, or oven baking – it puffs up and makes it so good!

Great minds Crystal! I was cooking and freezing on the same day. I made a double recipe of meatballs, a double recipe of Ricotta, Spinach and Proscuitto ravioli, 2 pans of Chicken Tetrazzini, a double batch of Spiced Oatmeal Raisin cookies, and Spinach, White Bean and Cheese Ravioli soup. The soup was dinner that night. Great feeling of accomplishment to get so much done in one day!
I started a series called CSM- Christmas Stress Management. LOL
I am going to be regularly adding lots of make ahead stuff to freeze now to be ready for later when time is short.
I make my own baking mix. So far have only used it for pancakes and biscuits, but there are tons of other things you can make from it as well. I love having it on hand as it is MUCH cheaper than buying it.
How do you freeze your home made bread? Do you bag it? double bag it? I never have luck with freezing bread- either store bought or home made. It always either comes out mushy or tastes very stale. I even tried putting in the oven to warm it up and it came out too hard. Any tips?
been so busy doing it, I hadn’t thought about blogging about it, good idea, I think we have finally made enough sauce from our tomatoes this year to last all winter!

I worked all Summer to stock my freezer from the garden. Oh, the hours I spent to have fresh veggies all winter. Then, while we were cleaning out our basement, we apparently accidentally unplugged our freezer. We lost lots of meat, all our veggies, and a myriad of other goodies that I had stocked up on from couponing faithfully. Yes, I cried. A lot. Glad to hear that all of you have stocked freezers, but don’t mind me if I sulk a little over what we’ve lost.
@Kati, Oh no!!! We have a OLD freezer that we need to replace soon. I always check it in fear of what you said happened, will happen. Lose everthing I worked so hard for. I’m so sorry! Today is a new day and a year from now maybe you will laugh about it. Maybe. 🙂

I’m looking forward to possibly snagging your meatloaf recipe. My meatloaf has been turning out a bit soft and mushy inside. I wonder if it’s because I use ground turkey and not ground beef…
@Saidah @ AProverbswife.com, Try adding in some rolled oats. It really helps the texture when using ground turkey. 🙂
