This recipe is one of our new favorites. Not only is it simple to make, but it is absolutely delicious. Plus, it won’t bust
your budget–and who doesn’t love that?
Mexican Tortilla Skillet
Serves: 4
Cost: Approx. $1.25/serving (if ingredients are purchased at Aldi)
Prep. Time: Less than 30 minutes
Ingredients needed:
1 lb. browned ground beef
1 can tomato soup
1/2 cup cheddar cheese
1/2 cup salsa
12 flour tortillas (burrito size)
1/4 cup water
Place tortillas on a cutting board. Use a pizza cutter to cut tortillas into 1-inch strips.
Rotate cutting board and cut tortillas again so that you have 1-inch square tortilla pieces.
Combine all
of the ingredients into a skillet and cook for 5 minutes over medium
heat. Sprinkle cheese on top and let cook until the cheese melts.
This meal
is perfect for a quick, frugal family night dinner. Instead of begging
for dessert, our kids beg for more! We like to serve this dish alongside applesauce and corn.

I made this tonight. Dh loved it. I added a little more cheese and salsa. I also added taco seasoning to the meat. It was a big hit!
I made this dish last night and it was SO good! Thanks so much for posting it. I used ground turkey instead of beef and whole wheat tortillas to make it a bit healthier. I also took someone’s suggestion here and added black beans. It turned out great. My husband was very impressed since I rarely cook. 🙂
Add the tomato soup at full strength. No diluting necessary.
Looks really good and I will make it. However, I am not sure whether or not the tomato soup has to be diluted or just added full strength. Could someone please advise.
I make this exact dish except with leftover Turkey every Thanksgiving. It tastes great and is a wonderful use of all the turkey leftovers.

Does this travel well? I have to make a meal for a family and it would need to be reheated. How does it taste reheated?

Target sells really good whole wheat tortillas that could be used also.
It does look yummy! I agree with whomever said to add a can of drained black beans. I think I would also put in a can of corn rather than serving it on the side, and serve with a salad or fruit instead. I’m putting this on my menu for next week! Thanks!

That looks so yummy! I’m going to try it. My picky preschoolers probably won’t eat any, but that means more for me!
You could also make it with low fat cheese, whole wheat tortillas and ground turkey ( or skinless chicken) to go a little healthier without totally busting the budget. Thanks – I will definitely try this out!

i’m going to try this for our milk allergy family, with omitting the cheese. but everything else is dairy free. thanks!
We make this every once in awhile, but we always use cheddar cheese soup, I’ve never made it with tomato.
