I never use the same biscuit recipe. I am always switching it up. But this one is one of our favorites: https://moneysavingmom.com/homemade-freezer-biscuits-recipe/
Homemade biscuits: 2 cups flour, 1 tablespoon baking powder (preferably aluminum free), 1 tsp salt. Add 1/3 cup fat of your choice. For fluffier biscuits use a solid fat that is cold. Butter and lard are great. But you can use whatever – oil, coconut oil, olive oil, cheese, etc. – you’ll just get best results with cold butter or lard. Cut the fat into the dry ingredients until crumbly. You can use that part of the recipe for all kinds of things. You’ve basically made biscuit mix. Pancakes, muffins, etc.
Add milk (2/3-3/4 cup) until it sticks together but isn’t too wet. Don’t stir too much. Roll out but remember that biscuits only fluff up some. So if you want thick biscuits, roll the dough thick. You can gently fold the dough on itself 3-4 times to make it flakier. Cut with a biscuit cutter or sharp knife. A clean, sharp cut is important to let them fluff up. Place on a baking sheet so that the biscuits are barely touching each other. Bake immediately at 425 degrees for about 20 minutes.
For drop biscuits add more milk. For pancakes add more milk, an egg, and sugar and vanilla to taste. For muffins do the same as pancakes, just a little less milk and add whatever add-ins you want.
I’m teaching my kids to memorize the basic biscuit ingredients because it’s so versatile. And way cheaper than biscuit mix. You can make a lot and keep it in the freezer. My son likes to make pizza bites: drop biscuits with cheese, garlic, Italian seasoning, and chopped pepperoni.
