I promise that I’ll be back to regular freezer cooking come August. Believe me, I hardly know how to live without a stocked freezer; it saves us so much time, money and effort.
And I also am hoping to start posting recipes and meal-plans again. Truth be told, we’ve been eating more than our fair share of cold cereal, peanut butter and jelly sandwiches and burritos. It’s not ideal, but sometimes you just gotta do what works! However, I’ve really missed cooking and baking and can’t wait to get back to it!

Oh, how I need this inspiration! We also just moved into a new house in a new state and I am so out of the habit and feel a bit like I am floundering on what to fix (that is cheap and healthy and it doesn’t take long in prep time). I’ve made up a page-long list of all the meals I can make from my pantry..seriously a month’s worth of meals! I’m already doing the Eat From the Pantry month as it is, so I might have to join in on this freezer cooking thing for the first time. I’m loving the freedom from the pressure of finding deals and grocery shopping!
@Allison, Hey Crystal, back in December you made Stromboli, and froze some unbaked and some pre-baked. Which way worked better?
I’d recommend pre-baking. That seemed to work best.
To tell you the truth, I haven’t done a lot of baking or cooking this summer due to the heat and humidity here in the South. My kitchen is on the south end of the house, near the a/c thermostat, so this part of the house heats up pretty quickly – and then the air runs and runs and runs. Cold meals requiring little preparation on the stove/oven make up the bulk of our suppers for the time being.
That sounds like a good plan- freezing and reheating. I am a nursing student plus a mom so this seems like it would save time and money. I am always busy studying and most of the time my family can only eat home cook meal from me every weekends!!! I felt bad but it is nice to know they are supportive and understanding. I can’t wait to see your recipes and suggestion!!!!!!!!!!!
I’ve never tried freezing and reheating. How do you heat up frozen food/dinners?
@LeAnna, Thaw a day or two in the fridge. Then bake as usual or heat on stove.
