Love your posts! I have been getting tons of zucchini from my garden. In previous posts you mentioned getting lots of zucchini from your garden. I have baked cakes and zucchini bread. Even grilled a lot of it. My garden is still producing more. What all have you done with it? Need ideas! LOL.
I miss my garden! We would roast it to make chips or fries, zucchini chicken casserole, zucchini boats with ground beef or lasagna, zoodles… We added it to nearly everything.

I add it shredded to all kinds of things, haha. We also love it grilled, or roasted on parchment paper in the oven, or in the air fryer. I freeze a BUNCH of it in gallon size bags in chunks (I pre-freeze it spread in chunks in a single layer on a baking sheet, then transfer to bags) and use it along with fruit in smoothies (instead of ice). It makes the smoothies creamier than using ice, and you cannot taste it! PLUS, you get in an easy serving of veggies!
