This week I making a roast in the crock pot which will make two meals for us. I will be using some of my freezer meals this week and the rest of our meals will be skillet meals or grilled dinners.

For the pizza muffins, what is the best way to freeze them and what is the best way to reheat them? I am going away for the weekend and I was thinking this would be a good dish for my husband to reheat…;)

I only plan out dinners–my husband is a diehard oatmeal eater at breakfast, and I tend to mix things up. Lunches are either simple leftovers or sandwiches, with nibblies and cut-up veggies that I package up at the beginning of the week.
I actually haven’t been grocery shopping yet this week because we were backpacking all weekend and yesterday was a crazy day! But I made our menu plan and shopping list this morning:
Tonight – ham and gruyere quiche from PlainChicken.com; steamed frozen broccoli
Wednesday – my husband has dinner at an event, so I will have grilled cheese and steamed frozen edemame
Thursday – pork enchiladas from my favorite recipe; brown rice; corn
Friday – grilled steak on the George Foreman (bought on Manager’s Special and frozen!); roasted potatoes; green beans
Saturday – after a busy day at a community service event, I’ll cook up some spaghetti to top with meat sauce from the freezer
Sunday – potluck at a church event; I’m bringing a vat of potato salad from a great Redbook recipe
So that’s it! As much as sometimes it stresses me out, I really love having a meal plan and knowing what I can look forward to every night.
I have got to make some of those oatmeal packets. I know my little girl would love them.

Just did a HUGE freezer filling session (like 34 meals worth!) I like to do a bunch all at once when the meats are on sale rather then just doing a few freezer meals.
