Make It From Scratch Challenge: Pancake Muffins (Day 2)

So I promise I won’t make chocolate things every day this week for the Make It From Scratch Week, but I couldn’t help myself since I was so eager to try the On the Go Pancake Muffins.

{Silas got the muffins tins really well greased! :)}

{Yes, I need some help with my stained muffin tins — if you have any great suggestions, I’m all ears!}

I thought the On the Go Pancake Muffins were decent, but they didn’t wow me. I think it’s because I decided what I like best about pancakes is that buttered griddle flavor.

Have any of you tried this recipe? I’d love to hear what you thought of it.

    I use steel wool with the soap in them, to clean muffin tins. It worked good for me.

    Those sound yummy. 🙂 I don’t have any advice on your muffin tins–mine look just like yours! I usually use steel wool too, it gets the worst of the gunk off, but they will always be stained, I think.

        I should have clicked over to see! I hovered and noticed it wasn’t the same site so I didn’t click. But I think it’s because you used full sized muffin tins instead of mini muffins. I have done this before because in my mind a big muffin is always better right? Wrong! They were ‘bleh’. The mini-muffin tin really makes a huge difference. Hope you’ll give it another shot! Love your site btw 🙂

    My muffin tins look just like yours. Maybe steel wool will work to get the stains off. I haven’t even tried to the stains off of mine.

    There are so many great muffin recipes out there that I can’t see the draw to make pancakes into muffins. However, when it comes to cleaning the pans I use Bar Keepers Friend. Doesn’t smell great but the powder is the cheaper version and it really gets the gunk off. Also, once you get them clean try to stay away from non stick sprays. The only nonstick spray I use is Baker’s Secret with the flour in it and it really does help to keep that gunky buildup to a minimum.

    Hi! I developed a pancake muffin for our family that we absolutely love! And they freeze beautifully! One minute in the microwave heats them up perfectly. Now, we’ve tried many different meats and the only one to make these awesome is Bob Evans sausage roll in the white package. No other meat tasted as nice, including other sausages and even bacon. Here’s my recipe (We have food allergies as you can tell from my recipe!)

    Pancake & Sausage Muffins
    3 cups white Spelt flour (You can use regular flour, but I think Spelt tastes the best)
    2 TBSP baking powder
    dash of salt
    2 cups Coconut or rice milk (Or you can use milk of course)
    1/4 cup canola oil
    1/3 cup of pure maple sugar (or add a bit more to taste to sweeten the muffin)
    1 TBSP pure vanilla extract
    (The above is my standard pancake/waffle recipe! Absolutely delicious! Coconut milk makes them crispy & light)

    Mix the above up and fill up 1/3 of the way in the greased muffin tins. Cook up the Bob Evans sausage, and pat away as much grease as you can. Place a generous amount of sausage in each muffin tin. I usually eye ball it to at least cover the surface, slightly pushing it into the batter. Then top the sausage with more pancake batter, filling almost to the top. Bake them at 400′ for about 10 minutes or so. DELISH!! 🙂

      Kelley H thank you for sharing!! My boys have food allergies as well, and i’m totally lost as to how to convert to allergy safe recipes. I end up making a not-so-good “safe” meal and a regular for the rest of the family. Do you have a blog with more recipes? Any help is greatly appreciated!

  • I just happened to read on FB today that baking soda mixed with hydrogen peroxide (enough to make a paste) is supposed to take gunk/stains off of pans. I haven’t tried it yet but I plan to! The suggestion said to make the paste, let it sit for a few minutes on the stains, and then rinse (or scrub?) off. Just thought I’d pass the suggestion along in case it works! 🙂

    I’ve heard tea tree oil is supposed to be good for cleaning baking sheets and muffin tins. Apply and use a bit of elbow grease. Haven’t tried it myself yet. 🙂

  • I made a vanilla layer cake today with homemade low-sugar strawberry jam for the filling (the low-sugar jam is more like strawberries in syrup) and strawberry icing. I’m not a big fan of cake so I rarely make it, but we had a birthday and this child likes cake.

    I use a blue Scotch-Brite pan to clean my muffin tins but they are still not perfect. It’s the easiest thing I’ve found for washing muffin pans, though. The green one is stronger and can scratch finishes (steel wool will do so even more) but the blue one can clean without wrecking things.

    I also made homemade pizza today: BBQ chicken with carmelized onions. I made strawberry shortcake for breakfast with homemade whipped cream.

  • You could do chocolate whatever every day for the challenge, and that would be just fine 🙂

    I haven’t had the chance yet, but thank you for hosting this challenge. I can really get behind this one and with it just being 5 days, I can also complete it 😉

    My muffin tins look just like that. Well seasoned and loved, I say!!

    I tried a magic eraser on my cookie sheet and it cleaned it right up! I was amazed as nothing else had worked.

    I don’t know if anyone has suggested this or not about the recipe, but you could try greasing your pan with butter instead of shortening to give the muffins more of a buttery taste. Just a thought. If you try it let me know how it turns out. 🙂

  • I can’t blog fast enough to share what I make the day that I make it, but yesterday I made enchilada sauce with lots of fresh tomatoes, onions, garlic, and spices. Yum! Now I have to decide whether to can or freeze it.

    When my tins or sheets look like that and no other remedy works ( I normally try a bunch of others that aren’t as potent first), I slip the sheet or tin in a 13-gal size trash bag with 2-3 TBSP ammonia in the bag (it doesn’t have to be on the tin or sheet). Tie up the bag and leave it overnight. (I set mine outside because one- if it leaked, yuck, and two- that SMELL i tell ya.)

    Anyway, bring it in later, rinse it and most of the stuff will come right off with running water. Run a sponge over the other areas, and voila! Perfectly clean. The fumes eat the stuff off. Scary, but it works….desperate times, desperate measures.

    For stains on pans, I use a mixture of white vinegar, baking soda, and dawn. Let it soak a while, then scrub your heart out! It worked wonders on the bottom of my pancake pan that was looking way sub-par. Hope it works for you 🙂

    Last night we made from scratch cottage cheese biscuits. A tub of cottage cheese from Aldi got pushed behind the milk and was not fresh enough to eat on toast (IMO) and I didn’t have enough items to make lasagna so I pulled out a buttermilk biscuit recipe, switched the cottage cheese (plus 1 TBS cream cheese and 2 TBS milk) instead of the buttermilk, added some garlic and onion. They are amazing! I hate to waste things and couldn’t bring myself to have cash in the trash. Reminder to your readers that if they have something not so fresh, find another way to use it up instead of tossing it (and you might just like it better than the recipe was to begin with; we did!).

    And your muffin pans, stains and all, just let me know you have years of muffin memories with your kiddos…. Don’t find shame in that! 🙂

    As far as the pans go soak in a solution of baking soda, vinegar & dawn & HOT water for 30-60 min. Work on cleaning it while water is still hot don’t sit over night it losses effectiveness. Then use something like a magic eraser. You could. Use steal wool too but I’d only resort to that if the stains really refuse to budge.

    Too bad on the pancake muffins not wowing but at least they were ediable right? 🙂

    I made the sauce for Hawaiian Haystacks from scratch last night. I rarely cook with cream of chicken, etc. soup, but Hawaiian Haystacks are one of the few things I make with that soup. I finally decided to try a recipe I saw on melskitchencafe.com for making the sauce from scratch. It turned out delicious! And the sauce was fairly simple (except that I couldn’t get it to thicken, which is my fault, not the recipe’s fault :-)).     I’m guessing Bar Keeper’s Friend or baking soda would work well on your muffin pans. But I prefer to think of them as “well-seasoned” rather than “dirty,” and I usually don’t bother. 🙂

    I made apple pie from scratch last night. Used apples from my crab apple tree in the back yard. This was only my second time making pie crust and I thought I rolled it alittle thicker than the store bought dough usually is so I cooked it alittle bit longer to make sure it wasn’t doughy, wrong… It came out alittle on the crispy side, but my family still raved about it. It was alittle tart because of the crab apples, but it paired nicely with ice cream 🙂
    Also this weekend I canned alot of apple sauce, apple butter and chokecherry jelly. My husband said my kitchen was looking like a mad scientist lab.

    May have to try some minis with this recipe.

    For the stains on my pans (glass and metal) I use a paste of Hydrogen Peroxide and Baking Soda….along with a gentle scrubby the stains come right off. 🙂

    Just got these muffins out of the oven and they are pretty good. I didn’t realize that I didn’t have any “normal” flour so I used a mix of 1/2 spelt and 1/2 almond flours. Can’t really say that I feel like they taste like pancakes, and I already have plenty of cookbooks with muffin recipes, but I’m still glad that I made these tonight so I have something besides frozen waffles or poptarts to give the kids for breakfast tomorrow.

    Well I can’t by any means participate every day that just isn’t in the cards for my schedule but tonight I did attempt to make pumpkin bread. It was a bit of a flop for myself and my husband though because I put chocolate chips in it, it was a hit with the kids. I’m going to revisit it later and see if I can make the recipe better.

    Tomorrow is taco night and I always mix up my own taco seasoning I wonder if that’s even something to note ‘from scratch’ I guess it’s a tad odd from a lot of families. *shrugs* I’ll count it LOL.

    Yes, Bar Keeper’s Friend will do it. I just discovered this myself. It’s less expensive at Target and Walmart. It works great on stainless steel, too.

    For the stains on your muffin tins or any hard to clean stains: soak in a sink of hot soapy water using powder dishwasher detergent. Leave soaking for several hours.
