Making Brown Butter Banana Waffles last week
One of our children is having outpatient surgery this week and I’m also flying to Bloomington, IL to speak at the Living Well Women’s Expo on Saturday (I’d love to get to meet you there, if you live in the area!), so we’re keeping meals pretty simple this week…
Breakfasts
Homemade Instant Oatmeal Packets, Cereal, Toast, Eggs, and/or Fruit
Lunches
Spaghetti, Bread Machine Bread Sticks, Green Salad, Fruit
Snack-y lunch
Cheese quesdillas, carrot sticks, apple slices
Peanut Butter & Jelly Sandwiches from the freezer, veggies, apple slices
Mini Deep Dish Barbecue Chicken Pizza Muffins, raw veggies, peaches
Leftovers x 2Snacks
Fruit/Veggies

Here’s our menu plan for this week:
-Homemade chicken noodle soup, biscuits
-Homemade pizza, applesauce, carrot sticks
-Pork tenderloin, corn on cob, spinach salad, mac n cheese
-Oatmeal pancakes, applesauce
-Black bean quesadillas with lettuce/tomato/avocado/sour cream/cheese
-Cook out at our church Care Group (bringing baked beans)
-Grilled Ribeye steaks, baked potatoes, garden green beans, spinach salad

Good luck with the surgery. My son just had an outpatient surgery last week and is doing great. Hopefully your child will do just as well. He was up and running around that afternoon. Make sure you take something to keep you busy while they are gone or you will go crazy. Ours was only an hour but seemed longer. Good luck with the conference. If I wasn’t 3 hours away and 37 weeks along I would probably come. Since my last labor was only 2 1/2 hours I don’t think it is a good idea. Maybe next time you are in the area.

Thanks! Like I said, I’m NOT at all familiar with Bloomington. I’ve been to the airport once (relying completely on my Google Maps directions) and once last year, I went thrift store shopping with a friend there, and I only remember a mess of 1-way streets (she drove!). But if I have good directions, I can get anywhere!

This week I am keeping our menu pretty simple too. This week is our first week of our fall homeschool so it will take us a week to get into the swing of things even though we do some school through the summer.
I have made homemade bagels and wheat thins before they turned out really good. My kids love to help make bagels. Since our bread machine broke we have to make the dough by hand which is a little more time consuming but not too bad with my stand mixer. I found with the wheat thins it worked really good to roll them out very thin on my silpat to keep them from sticking then transfer/flip the dough onto the baking sheet.

I’m so glad you mentioned the Living Well Expo. That is my nearest “big city” for grocery shopping, etc. I didn’t know anything about the Expo, yet I just “happen” to have a meeting in town Saturday morning, in perfect time for me to come. And $5?!? I’m there! Look forward to hearing you speak!

I’m going to be there from 10 a.m. to around 12:45 p.m. I won’t have a booth, but I’m guessing I should be near the main stage by 10:45 a.m. and at least until 12:15 p.m. If you do stop by between those times and you can’t find me, you can ask at the Hearts at Home booth — they should likely be able to get in touch with me or know where I am.
