    I am so glad to see you bring back your freezer cooking in an hour posts! I have been stocking my freezer all summer thanks to our CSA. I can’t wait until I get to step out of the kitchen and start enjoying all of those freezer meals this fall and winter.

      I love our CSA, too! This is our first year with it and it’s been great enjoying fresh veggies daily.

    Just did a HUGE freezer filling session (like 34 meals worth!) I like to do a bunch all at once when the meats are on sale rather then just doing a few freezer meals.

    Well I don’t have a blog, but I will postdinner menu anyway :)
    ~Green chili burgers with baked fries
    ~Goulash and homemade bread
    ~ Grilled chicken breast sandwhiches with guacamole and bacon, corn on the cob
    ~Football game Friday – no children – no cook!
    ~Lasagne, salad, french bread
    ~Turkey and all the trimmings, with leftover coffee angel pie for dessert
    ~Turkey tetrazini, crescent rolls

    Thank you for the breadstick recipe. We made them yesterday and they were amazing. I even used half whole wheat flour (family usually doesn’t like this) and they were so good!!!!

    I only plan out dinners–my husband is a diehard oatmeal eater at breakfast, and I tend to mix things up. Lunches are either simple leftovers or sandwiches, with nibblies and cut-up veggies that I package up at the beginning of the week.

    I actually haven’t been grocery shopping yet this week because we were backpacking all weekend and yesterday was a crazy day! But I made our menu plan and shopping list this morning:

    Tonight – ham and gruyere quiche from PlainChicken.com; steamed frozen broccoli
    Wednesday – my husband has dinner at an event, so I will have grilled cheese and steamed frozen edemame
    Thursday – pork enchiladas from my favorite recipe; brown rice; corn
    Friday – grilled steak on the George Foreman (bought on Manager’s Special and frozen!); roasted potatoes; green beans
    Saturday – after a busy day at a community service event, I’ll cook up some spaghetti to top with meat sauce from the freezer
    Sunday – potluck at a church event; I’m bringing a vat of potato salad from a great Redbook recipe

    So that’s it! As much as sometimes it stresses me out, I really love having a meal plan and knowing what I can look forward to every night.

    For the pizza muffins, what is the best way to freeze them and what is the best way to reheat them? I am going away for the weekend and I was thinking this would be a good dish for my husband to reheat…;)

    Ezekiel bread
    Lunches:
    Peach smoothies
    Turkey bologna & cheese sandwiches, carrot sticks
    Cantaloupe smoothies
    Humus sandwiches
    Dinners:
    Chicken & vegetable pasta salad with Ranch Dressing x2
    Spaghetti pie (from freezer) x2
    Salmon cheese potato soup (crockpot) x2
    Leftovers
    Turkey burgers, potato salad, sliced tomatoes x2

    This week I making a roast in the crock pot which will make two meals for us. I will be using some of my freezer meals this week and the rest of our meals will be skillet meals or grilled dinners.

      I’m doing freezer cooking in an hour posts every Thursday here on the blog. And I might so some lunchbox themed freezer cooking, too. We’ll see!
