Homemade Hawaiian Pizza — I made this on Sunday and it was so good! Recipe coming soon!

Breakfasts

Oatmeal x 5 (We’ve been having this every weekday morning before swimming lessons, by request of the kids as it’s something hearty to fill them up before swimming!)
Scrambled eggs, toast, fruit
Chocolate Chip Oatmeal Cookie Pancakes

Lunches

Red, White, and Blue Waffles, scrambled eggs
Baba Ganoush, Homemade Pita Pockets, raw veggies and fruit
Peanut Butter & Jelly Sandwiches from the freezer x 2, veggies, apple slices
Leftovers x 2
Quesadillas x 2, raw veggies

Snacks

Chocolate Protein Truffles
Healthful Chocolate Freezer Fudge
Chocolate Chip Oatmeal Cookie Pancakes
Fruit/Veggies

Dinners

Dinner with extended family
Grilled Ham & Pineapple Kabobs, grilled corn on the cob, Easy Dinner Rolls, peaches, green salad
Crock Pot Santa Fe Chicken served over rice, fruit salad
Grilled steak, grilled sweet corn, fruit salad, Easy Dinner Rolls
Crockpot Rotisserie ChickenEasy Dinner Rolls, peaches, steamed veggies
Chicken Lime Tacos, fruit salad
Dinner out

    I was planning on doing a rotisserie chicken this week, and I’m intrigued by this crock pot idea. I may just try it (and keep the enormous rotisserie in the garage sale pile!) Grilling up lots of meat to freeze this week!

      I ALWAYS cook my whole chickens in the crock pot. No water, just seasoning and cook on low all day. It turns out perfect every time.

      That is how I cook up my whole chickens. Just the chicken and seasonings. Low for 8 hrs.

    I picked our first tomatoes out of the garden last week before we left town. We craved BLT’s the entire time we were gone.

    I made Hawaiian pizzas yesterday. They were very good!
    We’re also having hamburgers (from a free pound of grass-fed organic beef from my health food store), wheat germ pancakes & eggs, sweet & sour meatballs with brown rice, and runzas from the freezer.

    The pancakes are the next thing on my list. I am a sucker for all those ingredients!

    The menu that I’m sharing this week is an example of how you can still meal plan while on vacation. Simplicity is the key! (And it helps to drive and have access to a kitchen.)

    made kale and sausage soup – i try and make it while it comes in from the csa and freeze it for winter time

    i make as many side dishes as i can from all the fresh veggies available – this also helps with my doing weight watchers so on that note
    tonight – london broil with grilled veggies, tuesday – sausage with onion & pepppers, thursday – bbq chicken with fresh veggies, lots and lots of veggies…
    we premake all the veggie sides on sunday afternoons – all the baking, grilling, etc is all done so only nuke them ….saves so much time and hassle for me after working all day!

      That’s a great idea. We have been bombarded with tomatoes, squash, green beans, and cucumbers from the garden and I have been giving it away to neighbors. I can’t believe I have been giving 0 point items away!

    So far just pulled pork I got a deal on at SAM’s that I had in the freezer, but we were swimming until 6:30, so I didn’t have much time. Oh, Sunday I made a biscuit topped hamburger meat and pinto bean bake. It was pretty good. Trying to eat healthier, so had salad with both. Cantaloupe and watermelon too! This morning I cooked teryaki marinated chicken breasts for lunches during the week. Coming home from the pool earlier tomorrow, so I can cook something more involved then.

    All looks yummy! Sometimes I do my whole chicken in the crock with water and veggie scraps that way I get broth too. I have also done it without water and wrapped in aluminium foil.

    What a funny coincidence, we are making Hawaiian pizza on the grill tonight. I’m not a fan of Hawaiian pizza myself, but my 13-year-old son loves it & asked if we could try it on the grill.

    Your menu looks wonderful! I have to laugh because I have that exact Crockpot Rottiserie Chicken recipe in the slow cooker right now! :-) First time making it, but it sounded like it would be fabulous and not having to turn on the oven in the crazy Oklahoma heat is a plus!

    After taking a few months off I’m getting back into the swing. I acutally have the month planned out, for the most part, but thought I would try posting just a week at a time. You never know what is going to come up (a week’s worth of swim lessons that I forgot about) to change the monthly plan.

      I also wanted to add that 3 or 4 of the menu items this week I will double to make freezer meals for next month, and perhaps a month or so after that. I so love having these on hand. Didn’t realize that till I ran out of freezer meals a few months back and never got around to putting more together. They really don’t take that long and make meal prep so much when it is time to use them.
