    Your menu looks great! I can see you are benefiting from all of the freezer cooking you recently did!

    We are experimenting with produce we don’t normally eat that is coming in our CSA. I didn’t think I would like beet greens, but they weren’t bad. :)

    Looks great, Crystal! Your menus are very inspiring.

    Tonight I made healthy homemade Hostess apple pies. I’ll be putting up pictures and blogging about the recipe tomorrow. They turned out great, and my hubby (who I really made them for), said they were way better than any he has ever had before.

    I’ll call that a good day in the kitchen! (Kinda helps make up for those not so good days….)

      I’ll be checking out your blog for the apple pie recipe! My kids always want me to buy them the store bought ones and I never do since they’re so unhealthy. Looking forward to it!

    Our community garden is exploding with oranges, lemons, apples, peaches, and lettuce. We are menu planning to use as much as we can! I made apple sauce in the crock pot already (I froze some to save for later) – we are eating apples, oranges, & peaches with nearly every meal and as a snack – also salads, extra lettuce on sandwiches, tacos, etc – we even made lettuce wraps instead of bread ;-) – we’ve got all kinds of other goodies sprouting too – since it is free we always plan our menus around what is coming up in the garden!

    Those omelets in a muffin tin look fun (and easy!) Summer break starts after I finish work today (I teach in a public school in NC), so I’ll be home with my boys. My four year old is at the “can I help you mommy?” stage, and I think he would love to help me make these.

    And I’ve been following your blog for years and read many of your weekly menus….this is the first time in a REALLY long time I haven’t seen you mention dinner with relatives, so you must definitely be needing some time at home with your kiddos! Having extended family nearby as you do is a blessing…..wish I had that opportunity….but being at home with your husband and kids can be just as rewarding. Enjoy the solitude….you’ve been a busy girl lately!!

    We are winging it this week. Our middle son is getting married on Saturday so we leave to go out of town on Friday. We are doing what works day by day and that may involve some frozen conveience foods or quick meals out. Our oldest son got married almost 9 years ago so I had forgotten how much work the mother of the groom has to do. In six weeks our youngest son is getting married and we do it all over again!!

    We’re moving so I’m trying to finish up all of the food in the house and keep meals simple! Last week, I made a two-week meal plan for dinners only with simple light foods for summer-

    We’re keeping the other meals simple too— toast with cashew butter and fruit, oatmeal, scrambled eggs, and smoothies for breakfast. Cashew butter and jelly, bean and cheese quesadillas, or make your own sandwich thin pizzas for lunch. Snacks are basically popcorn or apples. I’m determined to use up all of the food before we move!!

    Here’s our menu – trying some new Wildtree spice rubs and the BLT lettuce wraps were so fun last night! My almost three year old even insisted on making his own, including having mustard on it, and ate two of them! Will have to bring that back again soon for sure. http://wp.me/p1sFpi-vZ

    The Green Monster Smoothie sounds so good! I’ve convinced myself that I need a Vita-Mix or Blend-Tec to make good smoothies but please tell me that isn’t true :)

    Anyways – here is our meal plan. I am always trying to feed my family clean, organic, local, healthy food and its fun to find new stuff to make!
