I am going to do homemade fruit leather this week too! I saw a recipe in my Food Network magazine the other day, and it sounds so easy and healthy.

Our menu includes Greek Feta Chicken with Balsamic Mixed Greens, Baked Potatoes with the fixin’s and broccoli with homemade jalapeno cheese sauce, and Spinach Lasagna. The entire menu is here. http://www.savemoneylivejoyfully.com/2011/08/menu-for-week-august-14-20-2011.html

I’ll have to look into making my own fruit leather – that sounds like fun, but I got rid of my dehydrator a couple of years ago – can you do it in the oven? For snacks this week we are trying peanut butter popcorn, frozen banana bites and chocolate zucchini bread.

For dinners I am using much of our CSA veggies (lots of red cabbage in the fridge) and fresh tomatoes for salads and salsas. http://delicious-nutritious.blogspot.com/2011/08/this-weeks-meal-plan-8152011.html

Sadly, I am not making dinner tonight – Costco is! I love their rotisserie chickens and they are a decent price. Plus, we always have leftovers because the chickens are so big which I put on salads or make another meal from.

Your menus always make me hungry. Following the homeschool theme with food is a great idea! That’s something we will do when my oldest starts school in a couple of weeks.

My menu is my last one before it’s back to reality for our family-the kids and I go back to school, and my 2 yr old to the sitter. I dislike the end of summer break!

We are on week one, day one today….and rather than the fruit and yogurt, I tried to come up with something I had on hand:) There is a MFG group on FB…and I’m having fun seeing all of the creative ideas and recommends other MFW families have!

Well, last week I tried the homemade tortillas. I created a simple meal and needed some to go with it. My opinion? It is a lot of work. My husband’s opinion? Really great. So, in an effort to encourage my wonderful husband, I made them to go with the enchalada casserole (his favorite). He loved it. I must confess, after I made the amount I needed, I took the leftover dough and made a cherry dessert. I didn’t have it in me to roll out anymore then I needed! :-) As for this week, with my children starting school/homeschool, they get to choose Wednesday’s meal. Cinnamon rolls in the morning and spaghetti with homemade sauce for supper.

Those breakfast muffins look really yummy, but that seems like an awful lot of sugar. I made zucchini muffins last night and used 1/2c, and they are sweet enough, and mine don’t have any of the other stuff in them…the apple butter will add sugar to it too.

Yum on the banana ice-cream. What are you mixing it in? I have seen it done in professional juicers but have read that it can be made in a food processor as well. Have you tried it before? There is a place down at the shore where we vacation called “The Bashful Banana” and they make the frozen banana whip – but they also can add other frozen fruit such as strawberries and peaches to mix up the flavors. They use the professional juicer. It is like custard and very delicious. They can top it off with a vegan fruit “fudge” sauce (have seached in vain for a recipe – if you ever find one please share!)

You purchased so much fruit last week! I was impressed. Will your family eat it all with this menu? I notice you have a lot of fruit on this menu but your kids are pretty small. Does Jesse eat the same menu? Will a lot of it become fruit leather? Sorry I ask so many questions! I worry if I buy that much it will rot but at the same time, I’m always making a emergency milk and fruit run (which means not always the greatest prices).

We usually freeze whatever fruit we don’t use within the week for smoothies. That way, we have a variety of frozen fruits to choose from when making smoothies.

I tried the honey pizza crust today. It was great. Definitely the best pizza dough recipe I’ve tried so far. I don’t have a stand mixer so I mixed it with my bread machine and took it out to rise in the bowl. Worked great!

Including the recipe for Biaggi’s roasted beet salad that I was able to find on the internet that I am so.excited.about! Most of the veggies come from the organic produce bin we have delivered weekly (surprisingly as cheap or cheaper than buying the same non-organic produce at the grocery store – WAY cheaper than buying organic at the store!)

I am so going to try the fruit leather… after the summer is over. I do not think it is cost effective to turn the AC up higher to compensate the oven being on.

That toast is too cute…I never think to do things like this. It’s been easy dinners this week–I won’t have time to make a real grocery store trip until Thursday or Friday, so it’s things we have on hand in the pantry and freezer:
turkey meatloaf with mashed potatoes, grilled chicken and corn on the cob, whole wheat pasta with salad and garlic bread, scrambled eggs with bacon toast and fruit, dinner out.

I’m not making dinner this week. My husband is! For 2 weeks! He’s preparing us raw meals (yep for the kiddos too). He took over my blog for the day, and listed out the menu with recipes on my blog. Hoping a few folks might join us in the “adventure”. I’m a carnivore for sure, so this will be interesting. :)

I made the honey pizza crust dough and went to the original website linked and read all of the comments (where I found many people asking Aimee for her recommendations on how to bake her crust). But she never answered them. I haven’t seen anyone ask that on here so maybe I am the only one….do you have a recommendation for baking time/temp for the honey pizza crust?
