Here's the planned menu for this week using these groceries and what we already have on hand in the freezer and in our cupboards:
Breakfasts:
Cream of wheat, fresh juice
Whole-wheat waffles (from the freezer), strawberries, yogurt
Granola over yogurt with fruit
Banana muffins, scrambled eggs
Pancakes (from the freezer), strawberry smoothies
Whole-wheat waffles, hard-boiled eggs, fresh juice
Oatmeal, juice
Lunches:
Annie's Mac and Cheese, oranges
Shrimp, steamed veggies, toast
Egg salad sandwiches, apples
PB&J, veggies
Spinach rice and cheese casserole, strawberries
Leftovers x 2
Dinners:
Steak, mashed potatoes, green beans
Roast over noodles with gravy, steamed veggies, grapefruit
Meatballs, mashed potatoes with cheese, steamed veggies, muffins
Chicken broccoli rice casserole, grapefruit, scones, green beans
Beef hot dogs, steamed veggies, homemade bread
Chicken burgers with cheese, broccoli, fruit salad, homemade bread
Dinner out
Snacks:
Waffles
Banana muffins
Granola bars
Strawberries
Apples
Cheese

I just wanted to thank you for sharing the spinach and rice casserole. I made it a few days ago and it was great! I added more rice then you called otherwise I doubled the recipe and had enough for 3 big servings for this week and 3 or4 in the freezer. I’m also expecting and think these will make wonderful healthy snacks when needed!

I made the banana muffins i made included flax seeds, but i left the muffings on the counter for 3 days and it seems that the seeds (even though they were milled) started to grow…so they had black sprouts all on the inside of the 3 left over muffins! (i have some in the freezer, have yet to check on those) is this normal when cooking with flaxseeds?

The best marinade for steaks I have ever used (we eat them a lot since my family own cattle) is so easy to make! 1/4 cup of vinegar (helps make the meat tender), about 3 TBSP oil ( I use olive oil), 2 tbsp worchester sauce, and montreal steak seasoning (Mrs. Dash no MSG). I let mine marinade for severeal hours and they taste so delicious!

Money Saving Mom here: Yes, it’s in my head. 😉 Meaning, I have no recipe and just make them up on the fly. If I had a more concrete recipe, I’d be glad to share, but I pretty much never make them the same way and just add in a little of this and that based upon what I have on hand and what mood I’m in!

Money Saving Mom here: We usually go out or pick up carry in from one of our favorite restaurants once a week. It’s just a little splurge we allow ourselves since we both like to eat out, I enjoy a night off from cooking, and it’s something we can afford in our budget. It’s especially helpful when I’m pregnant!
That said, we still are pretty frugal when it comes to eating out. We’ll go on a Kid’s Eat Free Night, or we’ll use coupons, etc.

Money Saving Mom here: I’ve bought a variety of cuts–mostly whatever is $1.50/steak or less when reduced. We’re pretty willing to try whatever at least once. 🙂
I usually use Italian dressing for a marinade. I’m not sure where I came up with that in the first place, but we really like it. Just pop partially-thawed steaks into a glass baking pan, pour about 1/4 cup dressing per steak and let them thaw in the refrigerator all day. Bake in the oven at 350 degrees until browned or grill.
