An MRI & Beef Fajitas in the Crockpot

Last Night’s Dinner:

Last night’s dinner (Meatballs in the Slow Cooker — see above) was our least favorite meal of the week. I think it was because of the spaghetti sauce. I think it would have been super yummy with some kind of barbecue sauce instead of spaghetti sauce. (We’re not big fans of spaghetti sauce, though, so if you are, I’m sure you’d love the recipe!)

We served it twice baked potatoes, blueberries, and salad.

What I Made Today:

My day started with an MRI on my wrist. It was my first ever MRI and it was quite an interesting experience. I’m glad to have it behind me — and we’re hoping to find out some answers from it (I was in a pretty bad car accident in December and have had chronic hand/wrist pain ever since. They’ve done lots of x-rays but can’t see anything wrong, so the specialist ordered an MRI to hopefully give some clarity!)

When I got home from the MRI, I made Beef Fajitas in the crockpot. This recipe was a little more time-intensive to do than most of the other recipes that could be made in just a few minutes, but it was still really simple.

    I’m curious why you only put the rotel if it’s in the instant pot. Would it be too wet in the crockpot? I often put rotel and chicken breasts in to make taco chicken.

    And I don’t remember reading about your car accident! Hope the wrist is the only problem you’re having!

    • I didn’t really talk about it on here much because I haven’t really done any life updates in posts here, but it was a pretty big part of December — especially because my car was totaled. I shared more here and have shared on Instagram stories: https://www.instagram.com/p/BrFoe4SlXOH/

      Also, I put the can of tomatoes in and it worked just fine in the crockpot. But it was soupier than some people might like for fajitas.

    I hope you get answers from your MRI. If it is still a mystery, here is a thought. I had an ankle injury that all x-rays showed that there should be no problems. I went to a chiropractor that adjusted my ankle. Pain was fixed. I had always thought chiropractors were just for spines. Not all chiropractors adjust limbs, you would have to ask.

    • I’ve been going to my chiro every few days since the accident and she’s been SUCH a gift in my recovery from the car accident! She’s the one who said I needed to go to the specialist since the first round of x-rays didn’t show anything but the pain wasn’t getting better and she had tried some different treatments (cupping, needles, ultrasound, etc.) and none of them helped and the pain has continued and gotten worse. She’s afraid it’s fractured. I’m hoping it’s just bone bruise. I should find out this week!

      I’m a big believer in chiropractic care and I’m so grateful to hear it was such a help for you!

        I hope your wrist is feeling better. I was going to mention chiropractic care, too. If you haven’t tried Myo fascial, yet, consider giving it a try. Helped me tremendously with chronic, stress-related neck/shoulder pain.

        • The MRI showed that it was, indeed, fractured — as my chiropractor had been so sure it was! I’m so grateful to finally have answers for the pain and to be on a plan for healing (I’m in a cast for the next 4 weeks).
