Well, last week ended up having some extra responsibilities and some pretty major and unavoidable interruptions… so I finally decided to throw in the towel on my freezer cooking plans. That’s life sometimes, isn’t it?! But I’m going to try again this week — and hopefully it will actually happen! 🙂
Jesse and I are traveling on Tuesday and Wednesday of this week for some business meetings, so other than freezer cooking, I’m keeping everything else simple this week:
Breakfasts

Mac & cheese, fruit
Snack-y lunch {veggies, cheese, yogurt, fruit, crackers, etc.}

In regards to your homemade refried beans, I just got done making them….or so I thought. I soaked them overnight and cooked them 4 hours on high AND 2 hours on low. Upon mashing, I am finding that they are still hard. That’s one way I don’t like refried beans:) With hard pieces still inside. Is there any way to fix this now?

I made the breakfast cookies today that you are planning on making this week for your freezer cooking. They were AMAZING!! I did a couple things different as I only had 2 bananas instead of 3 and I didn’t have almond meal/flour so I use the extra oats and made it into a flour with my nutribullet (like oat flour). Worked just fine… oh and no walnuts for this family! 🙂
ANYWAY, they were delish! I can totally see my kids eating these for snacks, breakfast, and even as part of their school lunches! I definitely want to try them with Almond flour though!
My 14 month old got to try one fresh out of the oven (yes I cooled it first) and she gobbled it up!

I already made this & it’s REALLY good! I’d never eaten water melon rind before. I substituted for ingredients I had on hand. I used fresh parsley instead of coriander, 1 1/2 teaspoons prepared mustard instead of tumeric, & omitted the sugar. Since I used peppers & onions from the freezer, it was pretty soupy. So I added a heaping teaspoon cornstarch in a little water to thicken it.
2. Grilled turkey burgers, sliced tomatoes, fresh water melon x2
3. Crock Pot Hamburger Strogonoff, Sliced Tomatoes, Water Melon Ice x2
4. Pasta Salad

We were given a water melon & assortment of tomatoes this week. Yummmm! I cut up the white part of 2/3 of the water melon rind, which yielded about 8 cups. I’m freezing 6 cups of it to put in red sauces & chili.

Good Morning, Love your site and appreciate all the recipes. I would like to make the
5 Star Cheeseburger Casserole (from the freezer) and was wondering how you freeze this. Do you leave in roast pan and just put foil over it or do you put in freezer bags, then dump in the pan when your ready to use? Also to you cook first or freeze it uncooked? Thanks in advance for your help.

I just put it in a pan, covered it with foil, and froze it.

Thanks, I made a double batch today and put one pan in the freezer. This is a great recipe, little worried about the pickles on top at the end, but they made the dish. My mom and my daughter really loved it, it’s a keeper!

My favorite meals are ones for the Crockpot because they don’t require any cooking ahead of time. I’m planning to freeze at least 30 meals before my 3rd baby arrives this fall! 🙂

I made blueberry muffins this week from my Betty Crocker cookbook and they weren’t good (in my opinion…husband ate them all!) I am excited to see how your muffins turn out because I need a new recipe. I used to buy the mixes on sale, but I read the ingredients list last week and was grossed out.

Huge “mixing bowl” salads are served with all dinners. Breakfasts and lunches are leftovers. If I run out of leftovers, I have salmon or tilapia with veggies as back-up plans. I’m single and childfree, so luckily leftovers stretch awhile for me. I do almost all my cooking on the weekends so I can have leftovers all week, which is nice for me with my busy work schedule, plus Crock-pot meals are very quick and efficient.

Yum! Your menu looks amazing. I am trying the Paleo/Primal lifestyle as well but am struggling with meal ideas. I just bought some Boulder Sausage so I’ll have to try it with the onions and peppers.
