It’s Day 15 of the 21 Days to a Simple Christmas Challenge!

Today, I did some Christmas Freezer Cooking. I was planning to make three different recipes, but we spent all afternoon at the ice-skating rink, so we ended up only having enough time to make two recipes while we were making dinner tonight.

    Today I made 2 soups for the freezer for quick lunches when family is together.

    I’ve made peanut butter cup cookies, peppermint brownie bites (I used Andes peppermint chips), and Christmas M&Ms cookies over the last two days. My husband is taking some of each to his office tomorrow and the rest is in the freezer for two Christmas family gatherings.

    Good for you to spend the afternoon ice skating with your kids. I’m sure they had a great time. Your goodies look delicious.

    We spent most of the day today making our Christmas goodies. I’m going to try to get them all done by Friday because I just found out tonight that my husand’s parents will be coming from out of town to stay with us this weekend. So we will be celebrating Christmas twice this week. :)

    We made three fudge recipes and two bark recipes. While that may sound like a lot, all of the recipes are super easy to make. Tonight I made some soft centers so I can dip them in the morning and I made a Andes mint candy recipe tonight. It was a little crazy but we all have fun. It was great to have the kids helping me.

    The Reese’s fudge recipe looks like one I will need to try. I’m glad both recipes turned out good for you.

    On a complete tangent from your post – I LOVE your daughter’s hair. I have a 7 year old who always has her hair in her face! I am trying out that hairstyle as soon as she gets home from school.

      I love the style also.. though I imagine its easier to accomplish with a 6 or 7 yr old than my own 2 yr old :-) it holds very well too!!
      I made the fudge and the brownies. The tastes really good, but is chewier than I thought it would be… but its PB and chocolate, so I guess we’ll survive lol
      Brownies were quite good (once I read the directions correctly and actually melted the butter rather than creaming it)

    So interesting to read this right after your previous post about choosing what will really matter 25 years from now even though it may disappoint some people. You mentioned if you choose to spend time with your kids, you might get fewer blog posts written. And that’s exactly what you did in this post–ice skated and then chose to reduce your cookie amount so that you didn’t get stressed out by trying to do it all :)

    Love the case in point, and I’m also tempted to move to your town and become your neighbor in hopes in getting some of that fudge! ;) Just kidding–I’ll just have to whip up some of my own :) Thanks for sharing and Merry Christmas!

    I love your daughter’s pretty hair-do! I made something similar to the Reese’s fudge yesterday and it so yummy but incredibly rich. I cut it into tiny squares and stashed it in the fridge. I did not tell hubby it is in there so hopefully it lasts until Christmas. You made a good choice with the skating. More sweets will not be missed I am sure!

    I have a ?? about freezing cookies because I have had Christmas cookies that taste “freezery”! What is the secret?

      Make sure it’s some kind of moist bar/cookie and wrap really well and airtight. It’s air in the container/bag that usually is the freezer burn/taste culprit.

      However, some kinds of cookies/bars freeze better than others. If you are finding that a certain recipe doesn’t seem to freeze well baked, try just making and freezing the dough ahead of time. This takes a little bit more work when you want fresh cookies, but it will guarantee that they’ll taste very fresh!
