Lunch at church function — brought a big tossed salad
Snack-y lunch
Avocado Egg Salad, carrot sticks, apple slices
Cheese Quesadillas, sliced veggies, fruit
Peanut Butter & Jelly Sandwiches from the freezer, veggies, apple slices
Leftovers x 2


No Bake Mocha Chocolate Chip Cookies
Reese’s Peanut Butter Cup Baked Oatmeal
No Bake Energy Bites


Dinner with extended family — brought a big tossed salad
Sausage & Veggie Stovetop Hash, Blueberry Cobbler in the Crockpot
Steak, Scalloped Potatoes in the Crockpot, Fruit Salad
Quinoa, Tomato, and Avocado Salad, Grilled Chicken, Fruit Salad
Lasagna on the Stovetop, Homemade Rolls in the Crockpot, steamed broccoli, fruit
Dinner with friends — bringing a relish tray
Dinner with extended family

      No, we never had issues with them getting dry. However, we usually keep our sandwich bread in the freezer anyway since I buy it in bulk and freeze it.

    I am trying more crockpot meals this week. The library had a cookbook called, “Make it fast, cook it slow”. The website/blog that goes with it is crockpot365.blogspot.com She has put together a great collection. So far we have tried two of them, but I hope to do more. Especially some of the desserts and drinks. Really looking foward to getting past roast recipes.

    Otherwise, I am trying to do as little shopping as possible. I will have to pick up a few things, but most items I have here at home.

    May I just say that I am jealous (not in a sinful sort of way :-)) that you live close enough to have these wonderful extended family dinners? You are very aware of God’s blessings in your life so I’m sure you don’t take it for granted!

      That was one of main reasons we moved back here — so we could be close to family. We don’t know how long God will have us here, but we’re trying to appreciate and soak up the opportunities He has for us here.

    I’ll be working on a menu today as I normally do my shopping on Wednesday. That’s when most of the stores around here start their new ads. Your menu looks great with lot’s of variety & yet healthy as well. I try to do the same adding occasional treats for my husband & the kiddos. My family LOVES those No Bake Energy Bites & thank you Crystal so much for linking up to them in the past. I haven’t made them in awhile, it seems like they disappear so quickly!       P.S. I am able to see the Publix (where I mainly shop) ad on Monday instead of waiting on Wednesday by going to I Heart Publix. She matches up the deals with coupons & I am so thankful for the early preview.

    Crystal, have you ever made the Crockpot Scalloped Potatoes without the sherry listed in the recipe? Just curious!

      I’ve never made them before; it’s a new recipe to me. I’ll be leaving the sherry out and I think they’ll turn out just fine — I hope!
