Pumpkin Pancakes

Ingredients  

  • 1 1/2 cups milk
  • 1 cup pumpkin puree
  • 1 egg
  • 2 Tablespoons oil
  • 2 Tablespoons vinegar
  • 2 cups all-purpose flour
  • 3 Tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions

  • In a large bowl, mix milk, pumpkin, egg, oil, and vinegar.
  • In a separate bowl, combine the rest of the dry ingredients into a separate bowl.
  • Stir dry ingredients into the pumpkin mixture just until combined.
  • Cook on a lightly oiled or buttered griddle.
  • Serve warm with butter and real maple syrup!
