Ingredients

2 to 3
cups
leftover mashed potatoes
▢
2
eggs
▢
Salt and pepper
▢
Butter or oil of choice
▢
Sour cream, chives, garlic
(optional toppings)
Instructions
In a medium bowl, mix mashed potatoes, eggs, salt and pepper together.
Melt butter or heat oil in a frying pan over medium heat.
Shape small portions of the potato mixture in your hands until they resemble a flat burger patty.
Place potato “patties” into the pan and flip after 3 or 4 minutes, or when golden brown.
Serve with sour cream or your favorite garnish/condiment.
