Mashed Potato Pancakes

Ingredients  

  • 2 to 3 cups leftover mashed potatoes
  • 2 eggs
  • Salt and pepper
  • Butter or oil of choice
  • Sour cream, chives, garlic (optional toppings)

Instructions

  • In a medium bowl, mix mashed potatoes, eggs, salt and pepper together.
  • Melt butter or heat oil in a frying pan over medium heat.
  • Shape small portions of the potato mixture in your hands until they resemble a flat burger patty.
  • Place potato “patties” into the pan and flip after 3 or 4 minutes, or when golden brown.
  • Serve with sour cream or your favorite garnish/condiment.
