Scrub and peel the potatoes (you can also leave the peel on if you prefer) and chop into bite-size chunks.
Place the potatoes in a microwave-safe bowl and sprinkle generously with salt and pepper.
Microwave the potatoes for 4 minutes. Stir and microwave again for 4-5 minutes, or until tender.
Finely dice the onion and garlic. Chop the cabbage and slice the kielbasa.
Heat 1 Tablespoon of olive oil in a large wok or frying pan.
Sauté the finely diced onions and garlic until tender.
Add the sliced kielbasa and fry until beginning to brown.
Add 3 more Tablespoons of oil (or more as needed) and add the potatoes. Fry until beginning to brown.
Add the chopped cabbage and 1/4 cup water. Put the lid on and simmer, stirring occasionally, until everything is cooked through, another 5-10 minutes.
Season with more salt and pepper to taste.
Bake the Texas Toast according to the directions on the box.
