Easy Make-Ahead Sweet Potato Casserole

Ingredients  

  • 3 lbs. sweet potatoes you’ll want to end up with at least 4 cups of mashed sweet potatoes
  • 1 cup sugar
  • 2/3 cups milk
  • 6 Tbsp butter melted
  • 2 eggs
  • 1 teaspoons vanilla

Topping Ingredients:

  • 1 1/2 cups brown sugar
  • 1/4 cup flour
  • 1/3 cup butter cold and chopped into small chunks
  • 1/2 cup chopped pecans optional

Instructions

  • Preheat oven to 350ºF.
  • Peel and dice 3 pounds of sweet potatoes.
  • In a large pot, cover sweet potatoes with water and boil until tender (about 15 minutes).
  • Drain water off potatoes and mash until large clumps are gone.
  • In a large bowl, measure out at least 4 cups of cooked and mashed sweet potatoes (this does not need to be exact).
  • Add in sugar, milk, butter, eggs, and vanilla and mix well with an electric hand mixer.
  • Spread mixture into a greased 9″ x 13″ baking dish.
  • In the same bowl, mix topping ingredients together until mixture feels like coarse sand, then sprinkle over sweet potato mixture.
  • Bake in preheated oven for 45 minutes.

Notes

Make-Ahead Directions

After step 8 above, let the potatoes cool to room temperature, then cover and refrigerate until the day of your party.
Bake, as directed, in the preheated oven for 45 minutes, or until the potatoes are fully heated through and the topping is crispy.
