Put all the bread ingredients in the bread machine, in the order listed, or in the order recommended by your bread machine model.
Run the dough cycle.
While the dough is in the bread machine, whisk together the eggs and the milk in a large bowl.
Mix in the chopped spinach and deli meat, seasonings, and any other additions you prefer (like shredded cheese).
Pour this mixture into a greased 9×13 pan and stick it in the refrigerator until ready to bake.
When the dough cycle is finished, transfer dough into a greased loaf pan (or two loaf pans, if you’re doubling the recipe). Let rise in a warm place for 30-40 minutes.
Preheat the oven to 350 degrees. (Note: If you are letting your dough rise in the oven, make sure you remove the pans before preheating the oven… not that I’ve ever made this mistake, of course!)
Take the quiche out of the fridge and bake it for 40 minutes in the preheated oven, or until set. 10 minutes after you put the quiche in the oven, stick the bread in the oven also and bake it for 30 minutes (I recommend you cover the bread with foil after 15 min. to prevent over-browning).
Let the bread sit for 10 minutes after coming out of the oven, then remove the bread from the pan and cool on a wire rack.
