Preheat the oven to 450 degrees.
In a mixing bowl, combine the ground chicken, eggs, ground oats or bread crumbs, mayonnaise, chopped onion, garlic, and spices. Mix together well. Put the bowl into the freezer while you prepare the potatoes.
Wash the potatoes and cut into sticks/fries. Dry well with paper towels. Place the potatoes on a cookie sheet lined with parchment paper. Drizzle with olive oil and sprinkle with salt and any other spices you prefer.
Bake at 450 degrees until crispy, stirring occasionally. (This takes 25-35 minutes, depending on how thick your fries are.)
Heat a few Tablespoons of olive oil in an electric skillet. Remove the bowl from the freezer and form into patties using oiled hands (if the mixture is too wet/sticky, you can just plop it onto the skillet and spread it into a patty on the skillet using the back of a spoon). Cook on one side until browned and then flip and cook the other side until brown. Use a meat thermometer to make sure the internal temperature reaches 165 degrees.
Wash and slice the lettuce and tomato and serve with cheese on top of the burgers, with the hot fries (and lots of ketchup, of course!) on the side.
