Cheesy Fiesta Potato Bake

Ingredients  

  • Bell peppers sliced
  • Onions sliced
  • Garlic cloves
  • Olive oil
  • Salt and pepper
  • Thyme, Rosemary
  • Shredded cheddar or your favorite cheese
  • Leftover quartered potatoes

Instructions

  • Preheat over to 375ºF.
  • Place sliced peppers, onions, and garlic cloves in a roasting pan. Drizzle with olive oil and season with salt, pepper, and herbs.
  • Cover pan with foil, and cook in preheated oven for 20 minutes.
  • After 20 minutes, add in leftover cooked potatoes, sprinkling with a little extra salt and pepper and your favorite type of cheese.
  • Re-cover with foil and cook for an additional 5 minutes (or until cheese is melted and potatoes are warm).
