Instructions
Fry the bacon in an electric skillet until done. Put the cooked bacon on paper towels to drain the grease.
In the same skillet, add the eggs and fry them in the leftover bacon grease until they are cooked as much as you prefer them. Remove from the skillet to a paper towel.
Slice the ciabatta in half and butter each half. Place on a cookie sheet and broil in the oven until lightly browned. As soon as you take the rolls out of the oven, put cheese slices on half of the hot rolls (you can also add the cheese slices the last minute or so of broiling).
Prep whatever sides you are serving with the sandwiches.
Assemble into sandwiches and serve immediately!
Notes
This versatile recipe can easily be adapted depending on what bread you can find on the clearance cart at the back of your local Walmart! I’ve used bagels, ciabatta, rolls, and English muffins, and they all taste great!Tonight I served the sandwiches with grapefruit and green beans, but again, the side possibilities are endless.
