Dash of cream or milk
▢
Salt and pepper

strips of bacon or a little ham
▢
Leftover potatoes; cubed or diced
▢
Onion; diced
▢
Bell pepper; diced
▢
Garlic; minced
▢
Cheese

Sour cream

Instructions
In a small bowl, mix eggs, milk/cream, and salt and pepper. Set aside.
Heat a small frying pan on high. Turn down to medium-high and cook bacon until done. Crumble and set aside.
Sauté diced potatoes, onions, pepper, and minced garlic in bacon grease until tender.
Add bacon and egg mixture to the sautéd veggies and let cook until egg starts to set up.
Fold sides of omelet over to center and gently flip once the bottom of the omelet is cooked.
Notes
Feel free to add whatever ingredients you like to this dish — and top with cheese, sour cream, or any other favorite toppings.
