Baked Potato Omelet

Ingredients  

  • 3 eggs
  • Dash of cream or milk
  • Salt and pepper
  • 2 strips of bacon or a little ham
  • Leftover potatoes; cubed or diced
  • Onion; diced
  • Bell pepper; diced
  • Garlic; minced
  • Cheese
  • Sour cream optional

Instructions

  • In a small bowl, mix eggs, milk/cream, and salt and pepper. Set aside.
  • Heat a small frying pan on high. Turn down to medium-high and cook bacon until done. Crumble and set aside.
  • Sauté diced potatoes, onions, pepper, and minced garlic in bacon grease until tender.
  • Add bacon and egg mixture to the sautéd veggies and let cook until egg starts to set up.
  • Fold sides of omelet over to center and gently flip once the bottom of the omelet is cooked.

Notes

 Feel free to add whatever ingredients you like to this dish — and top with cheese, sour cream, or any other favorite toppings.
