Southwestern Casserole

Ingredients  

  • 2 cans refried beans 16-oz each
  • 1/2 cup salsa
  • 3 cups cooked chicken chopped
  • 2 cups shredded cheddar cheese
  • 6 tortillas

Instructions

  • Preheat oven to 350ºF.
  • In a medium bowl, mix together beans, salsa, and chicken.
  • Spread 1/4th of the mixture on the bottom of a 9×13-inch baking dish.
  • Sprinkle with cheese and layer two tortillas on top.
  • Repeat these layers twice.
  • Top with a final layer of beans and sprinkle the rest of the cheese over the top.
  • Bake in preheated oven for 30 minutes, or until heated through.

This recipe is freezer-friendly and could also be made in a slow cooker (layer ingredients and cook on low for 2-3 hours.
