1/3cupdried parsley(or 1/2 to 1 cup fresh parsley)
4oz.chopped green chilies
2cupscheddar cheesegrated
1/2cupbuttermelted
1/4teaspoonblack pepper
1teaspoonsalt
1small onionfinely chopped (or 1/4 cup dry onion flakes — can be omitted)
Instructions
Cook the rice (if necessary).
Preheat oven to 350ºF. Grease a 9" x 13" baking dish.
In a large bowl, combine cooked rice with all other ingredients.
Cover dish with foil and bake in preheated oven for 30 minutes.
Uncover and bake for an additional 10 minutes.
Notes
This frugal, family-friendly casserole can be made as a side dish or a main dish. You could also add some cooked chicken, cooked sausage, or cooked veggies to beef things up a bit. And it freezes wonderfully!
