Green Rice Casserole

Ingredients  

  • 3 cups rice (already cooked)
  • 2 eggs beaten
  • 1 cup milk
  • 1/3 cup dried parsley (or 1/2 to 1 cup fresh parsley)
  • 4 oz. chopped green chilies
  • 2 cups cheddar cheese grated
  • 1/2 cup butter melted
  • 1/4 teaspoon black pepper
  • 1 teaspoon salt
  • 1 small onion finely chopped (or 1/4 cup dry onion flakes — can be omitted)

Instructions

  • Cook the rice (if necessary).
  • Preheat oven to 350ºF. Grease a 9" x 13" baking dish.
  • In a large bowl, combine cooked rice with all other ingredients.
  • Cover dish with foil and bake in preheated oven for 30 minutes.
  • Uncover and bake for an additional 10 minutes.

Notes

This frugal, family-friendly casserole can be made as a side dish or a main dish. You could also add some cooked chicken, cooked sausage, or cooked veggies to beef things up a bit. 
And it freezes wonderfully!
