Place chicken, carrots, and celery in a slow cooker.
Pour chicken broth over meat and veggies and sprinkle with Italian seasoning, salt, and pepper.
Cover and cook on low for 6 hours.
Take chicken out and shred/chop.
Add chicken back in to slow cooker along with tortellini.
Cook until the tortellini is tender (about 30 minutes longer) adding a bit more water or broth if the soup gets too thick.
