Pumpkin Chocolate Chip Muffin Recipe

These Pumpkin Chocolate Chip Muffins have been a go-to recipe at our house for as long as I can remember! The best part? They freeze beautifully!!

Ingredients  

  • 4 large eggs
  • 2 cups granulated sugar
  • 16 ounces pumpkin pureé
  • 1 ½ cups vegetable oil
  • 3 cups all purpose flour
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp salt
  • 1-2 cups chocolate chips

Instructions

  • Preheat oven to 400ºF.
  • Grease two 12-cup muffin tins, or fill with paper liners.
  • In a large mixing bowl, beat eggs, sugar, pumpkin, and oil until smooth
  • Add in dry ingredients and mix well.
  • Fold in chocolate chips.
  • Fill muffin cups 3/4 full.
  • Bake in preheated oven for 16-20 minutes, or until toothpick inserted in muffins comes out clean.

Notes

To healthify this recipe a bit, you can try the following:
  • reduce sugar to 1.5 cups
  • use unsweetened applesauce instead of vegetable oil
  • use some (or all) whole wheat flour in place of the all purpose flour
You might also try swapping the pureed pumpkin for 2 cups mashed sweet potatoes or butternut squash. Here's a version of this from The Frugal Girl.
