Crystal, you should try out crockpot freezer meals. I did it last month and cannot believe how fast and easy it was, and how much time it is saving me! I am totally hooked!

I made the pumpkin butter today and it is SO good. I had to replace the spices with pumpkin pie spice because I thought I had nutmeg in the house but, as it turns out, I didn’t. But this seemed to work. I don’t think I ruined it.
And I made your bean and cheese burritos last week. Love them!

I made a snack-y type lunch for my kids recently and it was a big hit. My son is already asking if we can have it again. This is from a boy who always wants a sandwich for lunch. 🙂

We’ve been using our menu plan mainly as a jumping off point since we’ve had after school activities and a bout of illness. However, it’s so nice having a plan with all ingredients on hand so that we don’t end up picking up food and spending money that is already a bit tight.

Just a personal question I’ve been thinking of since I noticed you always have the same things for your lunches. Does your husband enjoy these simple lunches? It seems like a man would like more sustenance. lol (I do realize the leftovers lunches are more hearty).

He doesn’t eat at home with us since he’s at the office or on the road. If he were eating with us, we’d have more variety. As it stands, my kids love having the same things over and over again. 🙂

I pinned the slow cooker pumpkin butter. It looks really good and I know a few friends who love pumpkin butter so I just might try making it and a plate of homemade biscuits as my contribution to our next get together.

We do home made pizza every Sunday, my husband makes a whole wheat crust and we use low fat ingredients. My facorite is BBQ Chicken, we use chopped cooked chicken breast, chopped purple onion and chopped turkey bacon along with cheese and bbq sauce in stead of pizza sauce!

I’m not sure if I’ve ever commented this before but I think it every time…I envy (in a non-sinful way :-D) your dinner with extended family.
For those who have family nearby, please know what a tremendous blessing it is that you’re able to have casual evenings together and have a support network nearby. It is a treasure that no price tag could account for.

Yes! We are so very grateful for the opportunity to be close to family right now. It’s a blessing we don’t take for granted — especially since we were a few hours away from family for the first few years of our marriage.
