I especially love your breakfast and lunch ideas…those are always the hardest things for me to plan. Especially those busy days when we are running hither thither…it’s so easy to stop for something…sounds like I need to make a big batch of those frozen PB&Js!

I love this post! This is such an encouragement to read what other people are eating at home! We live in a very high income area and I usually feel so out of it because so many people are eating out so much! I do love to cook but I also love to eat out! No, we aren’t — at least at the present. Our child is in the midst of allergy testing and, once we have the results of that testing, we’ll be deciding upon our next course of action.

And I love how you just pinch off small portions of the dough to roll it out for the pizza/ham&cheese pockets. I had been cutting them into circles. Much more complicated! I’m definitely doing it your way next time! 🙂

Someone suggested rolling it out into one big rectangle and then using a pizza cutter to cut into smaller rectangles. That might also work, too.

I’ve done that too, which was easier than using a biscuit cutter or big jar lid to cut circles for sure! But I still think your way of just pinching off smaller portions will be even better. No re-kneading and re-rolling over and over again.
