Last week we found out that one of our daughters need to eliminate eggs, diary, and peanuts from her diet for a few weeks so it was more challenging for me coming up with healthy meals that everyone can eat and enjoy.

I had a baked potato bar when my family was visiting, and I was so glad that I had already baked my bacon, had it chopped, and simply reheated it in the microwave. Steamed broccoli was a great topping, too. Of course, sour cream and shredded cheese! 🙂

Those crunchy peanut butter cups are definitely going to be added to my cooking session this week. Those look easy and very good. We do baked potato bars a lot, especially since we have been getting a lot of potoates from our CSA boxes here lately. I try to fix some extra to carry over for lunches the next day.

We are allergen-free in our house since my son (who is nursing still) is allergic to wheat, dairy, peanuts, egg and avocado. My daughter is allergic to peanuts. We eat clean and healthy on a budget…hope it helps give some good ideas! http://inthebrownbag.com/menu-plan-49/

Tonight I made bread machine bread sticks using my $5 garage sale bread machine for the first time and they turned out great!!!! I was a little scared I was just going to waste ingredients and end up with a mess, besides I only had rapid rise yeast and didn’t have time to let it run through the whole dough cicle or let it rise for a whole hour after that! Well it was so good I only stopped eating because I had to leave for a school meeting… Thanks for inspiring me to try out new things, 2 weeks ago I made the english muffin bread and before that had never though of bread as something I would look foward to make!!

I’m hooked on spaghetti pie. It’s cheaper than lasagne & ends up being about $4 for a 9×13″ pan. Pasta was on sale for 49c, cottage cheese for 99c, eggs for 99c, & ground chicken $1.25/lb recently. I assembled a double batch tonight to bake tomorrow, then freeze. I made Mexican Casserole in the crockpot for tonight, crockpot black beans & rice for another night, & plan on making crockpot cheeseburger soup this week.

I have to ebook Easy Homemade too. I am in the process of my monthly menu planning I will have to get it out and see if there are any recipes I want to give a try. I am also hoping to get some freezer cooking in later this week or next week too.
This week I will be making a few skillet dinners along with using a freezer meal from the freezer. We will be eating some scones and waffles for breakfast, I made over the weekend too.

I don’t want to be the grammar police, but you always say you welcome comments on errors. There are a couple of misplaced apostrophes. Where you wrote about the “Kid’s Eat Free coupon,” there should not have an apostrophe in kids. There is no possession, just plural – more than one kid.
Also, for the “Young Couple’s Group” the apostrophe should be after the “s” unless your group consists of only one couple. 😉

Whoops, I canNOT believe I did that — especially since I’m reading Eats, Shoots and Leaves!!!
I guess I’ll blame it on the fact that I was watching my kids play in the backyard, distracted by a crazy phone call this afternoon, and planning out a busy day tomorrow — all while trying to blog! Yep, that’s what happens when I write too quickly and don’t proof what I write.

I have some pork roast leftover from Sat….I’ll use flour tortillas for that as well as some broccoli and fresh fruit for a dinner. I made a meatloaf, rice tonight….there are leftovers so I’m looking forward to meatloaf sandwiches….I’m going to try and make a dish that my son loves when we eat out…it’s chicken baked with cheese sauce….with spinach…..and then we will eat out on Friday night…Nick at the movies and I will grab a roasted half chicken and have some salad…..then he will be gone for the long weekend to Berlin with the youth services here so I will do some cooking for the coming week.

Oh boy, those brown butter banana waffles look SO GOOD! Can’t wait to hear about them after you make them 🙂 We are actually enjoying a baked potato bar right now!
